Cruise Ship Company which include a total of 10 ships and member of the prestigious World's Leading Cruise Lines, an association of the world's most important cruise companies.
Position description
Oversee onboard culinary operation to ensure the established recipes, and procedures are being followed and ensure that all food preparation areas meet all Sanitations standards and procedures also. Perfo rm culinary audits. Assist in development of new training programs, monitor, evaluate Executive Chefs and provide them with menus, recipes and train culinary staff, document observations. Discusses issues with the Executive Chef and the Service Director.
Assists with new product development. Consults on organizational charts, seeking to best utilize space talent and Budget. Work on culinary taskforce assignments. Act as a culinary consultant to Human Resources Selecting and training candidates for future promotions, participates in the selection of the Executive Chefs also.
Position requirements
Requirements:
- Degree in Culinary arts. European training certification program, or equivalent.
- 3-5 years of Cruise ship experience as Executive Chef required.
- Extensive banqueting facilities for upmarket clientele and multiple dining outlets
- Extensive knowledge in classic and modern European cuisine.
- Experience in menu creation and recipe development
- Good level of English mandatory.
- USPH and/ or HACCP certified.
Position salary

- travelling expenses paid. Offices based position with minimum of one month in
each ship.

Work Experience Requirements
All applicants must have previous experience in working on a Cruise Ship, in a 4/5* Hotel or in an Upscale Restaurant.
