Principal Functions
Assists the Public Rooms Manager in the daily overseeing of the operation in all public bars, lounges and beverage service on decks. Assists the Public Rooms Manager in the evaluation and training process of Bar Supervisors, Bartenders, Bar waiters and Public Rooms utilities.
- Responsible for assisting the PRM in achieving the beverage sales forecasted for public bars and lounges.
- Assists the PRM in ensuring that all beverage stocks in the bars and pantries are used, stored and accounted for following company policies and guidelines.
- Helps the PRM in achieving the target cost of sales for the operation as determined by the company budgets.
- Assists the PRM in assuring the proper pouring measures are being followed according to standard operating procedure.
- Assists the PRM with the training and education of all those involved in sales and service of beverage products on board.
- Assists the PRM in maintaining the company standards for beverage service and in achieving the yearly goal for the bar scores in the guest comment cards.
- Assists the PRM in the implementation, monitoring and follow up of on board beverage promotions.
- Assists and helps the PRM in the organization and overseeing of all cocktail parties on board the ship whether they are sponsored by the company or hosted by guests or other entities.
- Assists in the overseeing of deck beverage services.
- Maintains a visible profile on the day to day operations by being on the floor frequently.
- Ensures that the back bars are set properly in each outlet and that the daily displays are in place according to schedule.
- Helps to oversee that all other existing beverage standard operating procedures are in place, adhered to and being followed throughout the ship. Helps to ensure that new standard operating procedures are implemented and follow up as per company instructions.
- Assists the PRM in ensuring the proper use and maintenance of all bar equipment and the cleanliness of all bars, lounges, pantries and lockers.
- Helps the PRM in ensuring that proper stock takes are being held on a cruise basis; and in guaranteeing that all beverages sold or used in the bars and lounges are being accounted for as required by company policies.
- Helps the PRM to ensure that all outlets are requisitioning products from stores as needed and in accordance to the beverage controls that are in place.
- Helps the PRM in overseeing and directing any other ship’s personnel that are scheduled to provide service in the bars, lounges, cocktail parties and any other special events that are assigned to the Bar Team.
- Ensures that the cleaning schedules for all the beverage outlets are being followed and executed.
- Assists in the collection of party tick off sheets; coordinates minimum manning schedules for port days; ensures that party payments are recorded and submitted at the end of each voyage to the Paymaster and Finance Officer.
- Assists the PRM in the preparation of reports and other documents that relate to day to day operation and that are required by the different departments and ship’s regulations.
- Helps to ensure that the Bar Team is following company guidelines regarding uniforms and personal hygiene.
- Responsible for becoming familiar with the Carnival Corporate Environmental Compliance Plan (ECP), as it applies to the duties and responsibilities of this position.
- Responsible for crew cabin inspection in his/her relative department and that the cabins are maintained as per company policy.
- Secondary education diploma or equivalent and/or previous working experience as a supervisor in a 4 or 5 star beverage operation.
- Proof of continuing education translated in certificates or letter of participation in specialised courses, seminars and tasting.
- Thorough practical knowledge of beverage operations.
- Knowledge of public health and sanitation regulations and procedures.
- One year of working experience as a supervisor in a fast pace 4 or 5 star environment with an international clientele.
- Working experience in a multiple outlet beverage operation.
- Working experience with an extensive beverage program that entails premiums and super premiums in all beverage categories.
- Command of the English language combined with fairly good verbal and written skills.
- Ability to build a strong Team focused on revenue generating and exceeding guest expectations.
- Ability to follow up on beverage promotions and other activities that will increase sales and enhance our guests cruise experience.
- Ability to help in training and motivating.
- Ability to innovate and foster creativity.
- Ability to help to plan, co-ordinate and implement work schedules according to business levels.
- Ability to organise and complete work in accordance to deadlines.
- PC knowledge of: Word and Excel.
- Fluent in interpreting and implementing companies and work rules.
