- Galley experience with minimum experience of sous chef position.
- Training Kitchen staff in our culinary standard.
- Organization and supervision of staff in the preparation of food for lunch. Cafe-time, dinner, midnight buffet, breakfast
- Help the team to Preparing the mise en place for Garde Manger, Entremetier and Roister ,Pastry etc.
- Responsible for organization and supervising setting up the buffets in the restaurant.
- Control and organization of merchandise ordering, storage following the FIFO procedure and in compliance with the requirements of the HACCP.
- Provide direction and guidance of (5-10) Galley employees of Bulgarian Nationality.
- Responsible for all plated meals produced on board for Passenger and crew
- Events Planning when required .
- Planning – Roll out of New Menus if required.
- Planning –Roll out Menu of Special Diet upon guest request.
- Food Cost Reports and Inventory Controls.
- Controlling Victualling on board
- Work Place safety.
- Health and Hygiene Control to Supervise.
- Maintain consistent food product quality according the company standard.
- Product Ordering according company instructions/schedule ,Maintain Loading – food item check.
- Eventually discrepancy / non conformity report to be issued.
- Tea time check.
- Midnight snack check.
- Organize and perform Cooking Demonstrations, Vegetable Carving during the cruise and any other culinary demonstrations’ as requested from Office.
- Organising and leading the Galley Visit Tour.
- Responsible for the Catering Cashbook.
