Position Summary:
This position is responsible for providing functional leadership and support in the Celebrity onboard culinary pastry operation to ensure the highest level of guest satisfaction. This includes supporting the development of all company standards and ensuring they are being adhered to in daily operations
Responsibilities:
- Oversee onboard culinary operation to ensure that established Celebrity standards, recipes, and procedures are being followed.
- Perform culinary audits to ensure product consistency throughout the fleet.
- Oversees the entire fleet of Executive Pastry Chefs .Supports the hiring, training, performance and development of all shipboard executive chefs.
- Provide Executive Pastry Chefs with menus, recipes, and train culinary staff in the execution of new menu cycles, dishes, and techniques.
- Assist in the sourcing, hiring and placement of culinary management.
- Monitor and ensure that all food preparation areas meet all U.S.P.H. standards and procedures.
- Monitor all food preparation areas for waste and over production of food.
- Attend designated food and equipment shows as approved by AVP Food and Beverage Operations.
- Act as a culinary consultant to Human Resources regarding hiring and sourcing culinary talent.
- Work on culinary taskforce assignments as assigned.
- Remain abreast of the latest culinary trends and developments; represent company at various trade shows, events and seminars.
- Maintains, updates and follows up on galley equipment inventory list, including budgets per ship, expenditure planning, galley remodeling, refits and dry docks.
- Liaises with and assists the Environmental and Health Department in developing and implementing effective USPH training programs, manuals and procedures for all food production related personnel and areas.
- Performs other duties as required.
Financial Responsibilities:
- Retains supporting responsibility for the financial performance of related onboard departments including food and beverage.
- Collaborates with the Director of Food and Beverage operations and Marine Operations in the management of the hotel maintenance budget. .
Qualifications:
- 7-10 years culinary management experience preferably in a high volume, 4 or 5 star resort, cruise line, hotel, restaurant, or food service facility.
- 3-5 years multi-unit experience culinary management experience, preferably in a multi-unit, 4-5 star resort, cruise line, restaurant, hotel or food service facility
- Bachelor's degree in Culinary Arts or related education and/or certification.
- 5 years of experience in Chocolate & sugar work
- To successfully adhere to the responsibilities stated, this individual must be prepared to travel 60% of the time.
- Ability to write reports which are clear and concise, outlining solutions and recommendation of actions. Individual must have good business acumen, and excellent organization skills.
- Excellent interpersonal skills to communicate with all levels of employees. Analytical thinking a plus.
