CREW COOK

Purpose of Position

Ensure an efficient and smooth operation in the Crew Galley.  Responsible for delivering the crew menu as per recipes.  They must maintain and follow company guidelines and standards.  The Crew Cook has the important job of cooking for their colleagues.

Your Responsibilities

  • Preparation and delivery of the Crew menus as per company recipes and photo manuals.
  • Maintain an open dialog with supervisors, ensuring that the highest standard of food preparations are met, and that quality and quantity are up to company standards.
  • Must have thorough knowledge of the culinary arts and be fully responsible for the quality and presentation of food leaving the Crew galley.
  • Prepare the Crew Menu as per Recipe guidelines.
  • Required to innovate recipes (if applicable) from time to time with changes and/or additions during the course of the cycle.
  • Supervise and monitor all personnel working in the Crew Galley, offering guidance and support.
  • Responsible for taking care of all requests from the direct supervisor on duty pertaining to specific assignments that may arise with short notice due to special functions, Itinerary or other unforeseen changes.
  • Responsible for communicating the status of all food production in the Crew Galley to the Executive Sous Chef / Sous Chef, ensuring that changes and additions are approved.
  • Checks the line setup and ensures the food is presented in the proper manner.
  • Ensure economical work practices and minimization of food wastage.
  • Ensure all food items are stored and handled according to HACCP procedures.
  • The Buffet Line has to be ready 10 minutes prior opening for Breakfast, Lunch & Dinner.
  • Countercheck daily deliveries from the Storeroom for accuracy, and report any discrepancies to his/her immediate supervisor.
  • Immediately report shortages for preparation purposes or during service hours to the Executive Sous Chef / Sous Chef.
  • Be familiar with the crew mess layout in terms of safety and security, have a full understanding of ship rules/regulations (SMS) and participate in all required Safety Drills/Training.

​YOUR PROFILE

  • Personality and Appearance: Must have a pleasant and courteous personality.  Must be well groomed and presentable.
  • Health: Must be physically fit and in good health, able to lift up to 50 lbs (30 Kilos) on a daily basis and a minimum of eleven hours per day, seven days a week.
  • Professional Experience and Education: Standard High School Education.  Requires a minimum of six years in the profession (Quality Hotels or Restaurants).
  • Communication and Language Skills: Must be able to read and speak English clearly in order to interpret documents such as recipes and manuals.  Other languages are considered a plus.
  • Work Ethic: Must be a serious professional and take great pride in their work.  Adherence to the Company Rules and Regulations is a must for success in the job.

Language Requirements

Good knowledge of the English language is required.
