We are looking for knowledgeable, dynamic Sous Chef candidates, who have a passion for cooking and coaching a team. As a Sous Chef you will be a responsible for directing, supervising, and assisting in the preparation of the food in either the main kitchen, cold kitchen or our Lido restaurant.

Essential Functions:

  • Responsible for quality, quantity, attractiveness of all food items served from your assigned kitchen
  • Implementing and executing food handling and cleaning procedures in accordance with USPH standards in the galley
  • Directs, supervises, schedules and trains all culinary staff assigned to your kitchen
  • Develop and update standard corporate recipes, implementing new menu cycles
  • Maintain a strong level of productivity, and cleanliness in order to produce high quality food for passengers and crew

Requirements:

  • 5+ years’ experience working in a 5 star cruise ship, hotel or high profile restaurant
  • 3+ years’ experience in a supervisory position; preferably in a multi-nationality setting
  • Proven ability to provide culinary supervision, training and delegation of at least 10 staff 
  • Proven ability to work in a high volume galley operation of at least 500 meals per service
  • Experience working in all major culinary stations; extensive knowledge in a designated station
  • Certification from accredited advanced food safety program; Extensive knowledge of food safety and VSP 
  • Working knowledge of computers, Microsoft Office (Excel, Word, and Power point) 
  • Fluency in reading, writing, and speaking English

Work Experience Requirements

All applicants must have previous experience in working on a Cruise Ship and in a 4/5* Hotel or Upscale Restaurant.

Language Requirements

Good knowledge of the English language is required.
