Fred. Olsen Cruise Lines – a family run company well known for quality cruises on modestly sized vessels and for the personal touch we offer our guests, that are predominantly from the UK and many of whom return year after year.
We currently have an immediate vacancy for Fleet Executive Chef to work on board our vessels. The Fleet Executive Chef is responsible for the overall culinary operation, production, maintenance and key personnel in the galley on board the ship. He/she must establish the manner and means to train personnel in their area of responsibility. He/she will maintains the standards and controls for all food products served on board according to the needs and requirement of the Company. He/she is also responsible for maintaining the highest health, hygiene and safety standards in food handling and production.
Qualifications
- 10 years of food preparation experience in high volume cruise ships/top quality hotels or restaurants with minimum of 6 years as an Executive Chef/Chef de Cuisine.
- Ability to write and create menus of varying themes and teach such dishes and presentations.
- Demonstrated ability to run all sections of the Galley, ability to lead and train staff.
- 3 years of verifiable certificate of apprenticeship/Culinary Master's Degree.
- Completion of an approved certificate or degree granting culinary program.
- Must be able to supervise staff of 60 + people, delegating and overseeing food production in a multi-unit operation.
- Ability to read, write and speak English fluently.
- Analyse and interpret procedure manuals, memos, technical procedures or governmental regulations.
- Must be computer literate and familiar with the Fidelio Material Management system and responsible for checking and authorizing movements of all food related items.
- Ability to provide culinary presentations and demonstrations.

Work Experience Requirements
All applicants must have previous experience in working on a Cruise Ship, in a 4/5* Hotel or in an Upscale Restaurant.
Language Requirements
Good knowledge of the English language is required.
