To provide quality beverage and wine service by managing the bar service areas in bars, lounges and restaurants.

To supervise, coach, train and develop the Bartenders, Bar waiters, Sommeliers, Wine waiters and Deck Stewards.

Major Areas of responsibility

.1 Customers

  • Actively interacts with guests in order to identify expectations and needs and fulfill them before they turn into an issue,
  • Effectively handles any guest complaints that may occur during service, suggesting solutions and alternatives to guarantee effective guest recovery.
  • Ensures that all guests (special) requests, inquires, and concerns are responded to promptly.
  • Organizes and co-coordinates special functions, cocktail parties, the Captain’s Welcome and Farewell parties.
  • Ensures that everybody within the bar department greets and smiles at guests.
  • Ensures that personalized service is provided by addressing guests by names.
  • Closely monitor all work stations, within the bar department, in order make sure that prompt, attentive, consistent & courteous service is provided at all time to each guest & through this helps to achieve the goal for the bar scores in the guest comment cards.
  • Keep in mind that Guests always come first.
  • Greet and smile at Guests and Crew.
  • Always ready to go the extra mile.
  • Communicates and interacts at all time in a friendly, professional and courteous manner with Guests and Colleagues.
  • Follow instructions received from direct Supervisors or any higher ranked officer.
  • Constantly display a positive and can do attitude.

  • Strictly follow and reinforce the company grooming policy.

.2 Organization & management.

  • Take full ownership of the entire bar department.

  • Able to use sound judgment when dealing with Guests.
  • Communicate and interact at all time in a friendly, professional and courteous manner with Guests and colleagues.

  • Shows respect at all time to guests and colleagues.
  • Build trust and excellent relationship amongst all crew in his/her department.
  • Ensure that all bar and lounge outlets are properly staffed, stocked, set up and open as scheduled,
  • Ensure effective bar services in the restaurants, bars and lounges; actively participating in the supervision of these areas at all times
  • Visits all bar outlets at peak hours to verify their smooth running, acting on and following up on any issues found to ensure standards are not affected,
  • Constantly monitor and supervise services, service-flow and service-crew in the bar service areas
  • Supervise the preparation, set-up and closing of the bars and lounges.
  • Supervise beverage service during lounge functions and performances.
  • Supervise wine service in the restaurants.
  • Participating at bar and wine service.
  • Ensuring that crew is knowledgeable and well informed about the beverages prepared and served.
  • Ensure that the sommeliers are knowledgeable and well informed about the wines served.
  • Develops goals that are, not only, achievable but also compatible with company objectives.
  • Assist and coach new hire & Jr. Staff.
  • Maintain ongoing training and development to help each of his team members to become more effective.
  • Identify the needs for training and provide appropriated one.
  • Provide fair performance review to crew members, based on their performance log, job description and by recognizing top performers and crew in needs of additional training.
  • Constantly follow company policies and procedures.
  • Schedule and publish the working hours with side duties of all crew in his/her department.
  • Always optimize working hours of all crew in the department.
  • Initiate ideas for improvement.
  • Flexible and pro-active when facing unexpected event or situation.
  • Always protect company interests, assets/property.
  • Ensure that a full and complete inventory and consumption record is maintained for all supplies and equipment assigned to the bar areas.
  • Requisition new supplies and equipment as needed.
  • Work closely with Provision Master for all beverages orders and recommend purchase of new equipment and supplies as necessary.
  • Checking the wine and beverage deliveries with the Provision Master after loading.
  • Assisting with the compilation of bars and wine lists.
  • Control the budget set for the department.
  • Maintain a good line of communication with all HOD’s and Managers.
  • Be pro-active and flexible.
  • Able to use sound judgment when dealing with guests & crew.
  • Perform other related duties as assigned or as directed.

.3 Safety compliance

  • Must be familiar with the Safety and Environmental Protection Policy and the SEMS, and carry out the policies and procedures appropriate for his/her position.
  • Constantly monitor the ILO.180 for compliance by providing guidance, coaching and addressing immediately the non-conformances.
  • Maintain at all time and healthy and pleasant working environment in his department.
