F&B Manager (Island based)

Job Objective:

We are looking for a dedicated, creative food and beverage manager to join our team. The responsibilities of the food and beverage manager include managing food and beverage operations and standards, adhering to budgets, hiring, and training food and beverage staff, and handling customer complaints. To be a successful food and beverage manager, you should have excellent customer service and problem-solving skills, as well as experience with designing menus. Ultimately, top-notch food and beverage manager should be skilled at ordering just the right amount of inventory to last until the next delivery.

• Maintaining positive customer relationships, processing complaints, and responding to customer needs.
• Willing to go the extra mile to support any special guest requirements in liaison with general management.

• Lead by example.
• Designing delicious and attractive menus and continuously making improvements.
• Forecasting, planning, sourcing, and ordering supplies to stock the bar and fridges.
• Building positive relationships with food and beverage vendors.
• Adhering to the food and beverage budget.
• Managing daily food and beverage operations.
• Following food and safety regulations.
• Assisting with marketing events.
• Creating and enforcing restaurant policies, targets, and KPIs.
• Hiring, training, and managing food and beverage staff.
• Communicate with other departments and staff members efficiently to always ensure smooth operations.
• Lead pre-shift team meetings and establish efficient weekly staff rosters.
• Communicate efficiently with other departments to resolve guest request and problems in a timely manner.
• Excellent skills on MICROS POS.
• Arrange bottles and glasses to make attractive displays.
• Take reservations for lunch and dinner (phone and VHF) ensuring all tables are seated in an organized and timely manner without double booking.
• Maintain a clean and safe working environment, including using all safety equipment including PPE wear correctly and following all safety procedures as set out by the General Manager.
• Follow all Cooper Island Beach Club policies and procedures.
• Any other duties as assigned.

Requirements:

• Minimum of 3 years’ experience in the hospitality industry, with an emphasis on food and beverages.
• Culinary or food service management degree may be advantageous.
• In-depth knowledge of the food industry.
• Strong working knowledge of related computer software, including restaurant management software.
• Ability to adhere to budgets and meet financial targets.
• Exceptional organizational, leadership, problem-solving, and communication skills.
• Ability to forecast food and beverage needs.
• Excellent customer service skills and the ability to stay calm, focused and keep the overview in a busy environment.
• Great delegation skills.
• Solid proficiency in English combined with good communication and interpersonal skills.
• Honest, hard-working individual with a high level of integrity and expectations in their quality of work.
• Excellent POS and Management skills a must

This is a permanent, live-in position on a remote island in the Caribbean. Therefore being physically fit and able to work long hours in a hot, humid environment is a must. The resort is open 10 months a year and closes for 2 months during which time prolonged leave can be taken.
