Job Objective:

The mixologist will have extensive training about the ingredients they use and have most major classic drink and cocktail combinations committed to memory, whilst training their palate to understand what makes a good mixed drink. You enjoy creating new concoctions and infusions to push ingredient boundaries ever further with a passion for customer service, high quality products and are keen to constantly self-educate, research and find new techniques or trends to ensure excellent guest experiences and repeat customers while thriving in a busy environment.

Key Job Responsibilities:

  • Excellent communicator and able to entertain both local and international clientele.
  • Focused on creating a memorable experience for patrons, both in service and drink.
  • Excellent knowledge or ability to memorize wide selections of products with a focus on Rum.
  • Deep understanding of alcohol ingredients, why certain liquors mix well with others and why a certain ingredient used in a recipe?
  • Knowledgeable about pricing, product origin and history.
  • Focus on the craft of a drink aspiring to create signature concoctions.
  • Skilled in creating drinks based on mixologist recipes, prepare garnishes using the right slicing techniques and utilizing pre-prepared ingredients.
  • A strong repertoire of classic and trending cocktails.
  • Create drink menus according to ingredient seasonality with a culinary approach.
  • Prepare individual drink components before service (flavor infusions, juices, syrups etc.)
  • Create regular specials in liaison with management.
  • Develop and test new drinks and refine current ones.
  • Regularly train other bar staff as requested by management.
  • Responsible for sourcing and stocking premium products and other bar supplies in liaison with management, find potential suppliers and lead       price negotiations.
  • Coordinate other staff members and ensure efficient performance.
  • Willingness to collaborate, communicate with and help other departments when needed.
  • Able to serve multiple customers in an efficient and fast way.
  • Ensure bar is fully stocked before service (ingredients, glassware, ice etc.) and set-up/close-down procedures are strictly followed.
  • Start service on time, dressed in uniform including immaculate personal appearance and hygiene, wear PPE as required and follow all safety and hygiene and sanitization guidelines.
  • Attend staff meetings, present new ideas.
  • Ensure responsible usage of all equipment, regular maintenance, cleaning, and sanitization.
  • Daily check of all bar equipment on functionality and cleanliness.
  • Communicate safety hazards or equipment failure immediately to management.
  • Check customers’ ID (as required)
  • Follow all policies and procedures.

Requirements: -

  • High school diploma or equivalent.
  • Secondary certification in bartending, mixology, or related field highly advantageous.
  • 2+ years’ experience in a busy environment required.
  • Food Handler certificate required.
  • Knowledge of food safety procedures.
  • POS skills and basic computer proficiency a must.
  • Strong stock management skills and purchase order follow up required.
  • Exceptional listening and communication skills (English fluent).
  • Immaculate personal hygiene and appearance.
  • Punctual, responsible, polite, and engaging personality.
  • Knowledge of laws and regulations required to serve alcoholic beverages.
  • Able to stay calm and focused during stressful situations and be able to assist other staff members in distress.
  • Able to occasionally deal with drunken or disorderly guests and assist in emergencies.
  • Physically fit, comfortable to stand long hours and lift heavy objects.
  • Willingness to work long hours, public holidays, weekends, nights, split, and overtime shifts as required.

This is a permanent, live-in position based on a remote island in the Caribbean. To be physically fit, have experience in remote environments and willing to work long hours in a hot, humid environment is a must. The resort is open 10 months a year and closed for 2 months during which prolonged leave can be taken.

Work Experience Requirements

All applicants must have previous experience in working on a Cruise Ship, in a 4/5* Hotel or in an Upscale Restaurant.

Language Requirements

Good knowledge of the English language is required.
