Job Responsibilities:

  • Always actively participates in daily meetings with Galley management to discuss the previous day's operations and efficiency, and upcoming products and events.
  • Regularly conducts thorough briefings with the Horizon Court and (on ships with no Chef de Cuisine) Alternative Dining galley staff as directed.
  • Supervises food product delivery in the Lido Deck, Bell Box, and (on ships without a Chef de Cuisine) Alternative Dining outlets, ensuring consistency by always requiring adherence to Company recipes, adequate production quantities, correct execution methods, and picture presentation as the minimum standard.
  • Always demonstrates acceptance of responsibility—in conjunction with the Assistant Maitre D' Hotel—for the buffet food score by regularly reviewing results and formulating and implementing measures to improve the score.
  • Knows the team's role descriptions, delivers them to all team members (new joiners, returning crew, and promoted crew), and communicates clear expectations based on each role description.
  • Successfully collaborates with supervisors in other Galley sections to ensure a steady and cost-effective supply of food products in the Horizon Court.
  • Always assists in formulating practical and creative plans for upcoming cruises and significant events (repositioning cruises, holiday events, etc.), effectively collaborating with department managers as directed by the Executive Chef.
  • Always ensures assigned staff complies with all Company, safety, environmental, USPHS, and Fleet regulations.

Qualifications:

  • Must have a tertiary qualification in Culinary Arts / Food Production from a recognized institution
  • Must have at last five years of experience as Sous Chef in a large Food and Beverage establishment and, preferably, have shipboard experience
  • Must successfully attend Advanced Sanitation course and achieve a score of at least 85%
  • Must have extensive knowledge of food products and demonstrable cooking techniques
  • Must have the ability to lead and train subordinates and provide clear direction under pressure
  • Command of the English language, both verbal and written

Work Experience Requirements

All applicants must have previous experience in working on a Cruise Ship, in a 4/5* Hotel or in an Upscale Restaurant.

Language Requirements

Good knowledge of the English language is required.
