Duties & Responsibilities:

  • Manages and oversees the Bar Deployment. Verifies that key personnel are consistently placed in their areas of expertise to help generate revenue and provide excellent service.
  • Regularly circulates among beverage areas to resolve irregularities, problems, and special situations in which staff members require senior level guidance or assistance and to gather feedback on product delivery and service.
  • Ensures that all Bar staff provide an immediate positive first impression to every passenger through a warm, welcoming individual greeting.
  • Consistently coaches all Bar staff to interact with every passenger, observe and identify passengers' preferences and adjust service accordingly, anticipate passengers' needs, and engage in conversation while showing genuine interest at all times.
  • Monitors of all beverage service areas including Inside Lounges, Dining Room, Bellbox, Horizon Court, and Open Deck areas, in conjunction with the Food and Beverage Director, and provides prompt feedback to staff on their performance.
  • Ensures that hours, staffing levels, and beverage service execution are correct in all Public Lounges, Dining Room, Horizon Court, Bellbox, Crew Bar/Wardroom, and Open Deck areas.
  • Ensures all beverage areas have the correct setup, appearance, and ambiance.
  • Regularly reviews work procedures and operational problems to determine ways to improve revenue yield, service, and team performance.
  • Reviews daily all Bar schedules in conjunction with the Bar Supervisors to identify shortages. Ensures that manning levels are forecasted correctly based on upcoming Food and Entertainment schedule.
  • Receives ordered beverage products and promptly inspects for correct product quality and quantity, in conjunction with the Hotel Inventory Manager (receives without Hotel Inventory Manager on PA and OP).
  • Assumes responsibility for revenue produced in all beverage outlets.
  • Analyzes daily revenues critically according to overall performance, location, and beverage sub-category to allow Food and Beverage Director to plan corrective action.
  • Develops and manages innovative measuring tools to help track how events affect revenue compared to the overall revenue performance.
  • Timely and accurately compiles Barstaff Gratuity Payout (Deployment Spreadsheet) to ensure that tips match payout and that accounting procedures and audit trails are correct at all times.
  • Knows team’s role descriptions, delivers them to all team members (new joiners, returning crew, and promoted crew), and communicates clear expectations based on each role description.
  • Observes each crewmember’s performance using his or her role description as a guide and delivers prompt and appropriate correction, improvement, or reinforcement. Coaches and develops skilled, engaged team members to become the Consummate Host.
  • Fairly and consistently resolves personnel problems and evaluates employee performance, taking corrective action when necessary.

Hiring Requirements:

  • Graduate of a recognized hotel/catering/culinary school.
  • Minimum 5 years of experience in Hospitality in a F&B Management position.
  • Extensive experience and knowledge in all aspects of hotel/cruise ship Food and Beverage operations.
  • Strategic planner, with an innovative, hands-on, practical management approach.
  • Ability to lead and motivate employees in pursuit of Company goals.
  • Ability to work independently and resolve complex issues from crew and management.

Work Experience Requirements

All applicants must have previous experience in working on a Cruise Ship, in a 4/5* Hotel or in an Upscale Restaurant.

Language Requirements

Good knowledge of the English language is required.
