Key Responsibilities

• Actively support the Bartender in setting up and closing the assigned bar area in line with brand standards and scheduled opening hours.
• Deliver warm, efficient and professional bar service, consistently applying Service Excellence standards to create memorable guest experiences.
• Confidently promote beverage packages, daily specials and Specialty Dining venues to enhance the guest experience and help achieve revenue targets.
• Maintain a clean, tidy, well-presented and fully stocked lounge and bar area at all times, ensuring all surfaces, equipment and furniture meet brand and public health standards.
• Prepare bar mise en place, including garnishes, glassware, condiments and non-alcoholic items, ensuring readiness for all service periods.
• Accurately take, process and serve guest orders, including OceanNow requests, ensuring timely delivery and resolving any issues promptly.
• Assist with regular bar inventory counts, stock rotation and replenishment as directed by the Bar Supervisor or Bar Manager.
• Follow all beverage accounting and cash-handling procedures, immediately reporting any discrepancies or irregularities to the Bar Supervisor or Bar Manager.
• Handle, clean and store bar equipment, inventory and supplies correctly to prevent damage, loss or wastage.
• Support food service in the bar or lounge area as required, collaborating closely with Restaurant and Bar teams to ensure seamless service.
• Adhere to all Public Health, safety, sanitation and Responsible Service of Alcohol (RSA) policies, actively contributing to a safe and compliant working environment.

Skills, Knowledge & Expertise

• At least two years’ experience as a Bar Steward or in a similar front-of-house bar role within the hotel, cruise, or wider hospitality industry.
• Formal hospitality education or completion of a recognized Hotel/Hospitality program is preferred.
• Solid working knowledge of bar operations, including beverage products, basic and classic cocktails, garnishes, glassware standards, and bar mise en place.
• Basic understanding of public health, sanitation, and food safety regulations, with the ability to apply these consistently in a bar environment.
• Strong organizational skills, with the ability to prioritize tasks, work efficiently under pressure, and meet service deadlines during busy periods.
• Confident cash-handling and basic numeracy skills, with the ability to follow beverage accounting procedures accurately.
• Proven guest service skills, with a warm, professional, and approachable manner and a genuine passion for creating memorable experiences.
• Ability to work collaboratively within a diverse, multicultural team, demonstrating professionalism, respect, and strong communication skills.
• Fluent English language skills, both verbal and written.
• Strong command of Japanese, both verbal and written, with the ability to hold conversations and provide service to Japanese-speaking guests.
