Position Summary

Be the Consummate Host by assisting in the management of all onboard food and beverage areas to achieve the highest levels of customer service, revenue generation, and control operational costs, consistent with the Company’s Core Values and brand strategy.

Duties & Responsibilities

• Mans the Food and Beverage office on turn-around morning (if coinciding with loading) to assist in dealing with passenger charge queries and other ad hoc issues..
• Ensures that all venues are set up, clean, and ready for operation before passenger embarkation.
• Helps ensure that all operational Food and Beverage areas are adequately manned to meet service demand.
• Performs some food and beverage preparation or other service tasks when necessary, including cooking, clearing tables, and serving food or beverages.
• Helps ensure that small-batch cooking takes place in the Buffet; ensures dishes are frequently replaced and maintained at the correct temperature.
• Reliably ensures that defrost schedules for the butchers' shops are in place and correctly adhered to, to guarantee the best quality product for the Galley brigade.ù
• Willingly helps expedite food on the food lines in the main galley or alternative dining outlets as deemed necessary by the Food Manager.
• Regularly helps the Food Manager oversee the delivery of food production, garnish, and presentation in all food outlets; provides accurate feedback on any irregularities.
• Implements and accurately tracks food counts; monitors food consumption patterns and reports them to the Food Manager.
• Regularly reviews work procedures and operational issues; provides timely feedback to the Food Manager and Bar Manager with ideas to improve service and performance.
• Invoices picklists in conjunction with the Junior Food and Beverage Manager.
• Regularly prepares and updates all maintenance logs and technical defects for Food and Beverage areas.

Job Requirements

• Diploma from a recognized European or USA Hotel Management School or University.
• Minimum of three years experience in a similar F&B role in a shore operation with international clientele or alternatively cruise ship's experience.
• Ability to understand, analyze and interpret financial results.
• Completion of Advanced/Intermediate Food & Hygiene.
• Strong leadership (leading by example) and motivational skills. - Needs to be very service and quality oriented "attention to details".
• Strong command of the English language combined with good verbal and written skills.
• Good social skills.
