As Executive Pastry Bakery Chef you will create lasting memories by providing exceptional service and beverage recommendations to all guests that selected Princess Cruises as their vacation getaway. 



Key Responsibilities

  • Effectively manages the production and delivery of pastry items for all food outlets, always ensuring compliance with Company recipes and picture presentation as the minimum standard.
  • Always ensures product quality in all food outlets through tasting panels and by managing and participating in mise en place during preparation periods.
  • Continually demonstrates knowledge of new pastry trends and production methods and regularly seeks guidance from the Corporate Pastry Chef / Executive Chef on implementing suggestions.
  • Effectively manages Pastry and Bakery galley staff during all operational activities and service periods, ensuring adherence to Company standards.
  • Conducts daily briefings with the Pastry and Bakery galley team to discuss the previous day's operational performance and efficiency, and upcoming products and events.
  • Continually trains and coaches Pastry and Bakery galley staff in the correct production methods and skills, culinary techniques, menu, and recipe knowledge, product-holding techniques, and presentation and delivery of the product.
  • Responsible for the production and delivery of baked and pastry items for all food outlets, always ensuring compliance with Company recipes and picture presentation as the minimum standard.
  • Participates in culinary demonstrations as required. 
  • Always advise guests about restricted diet options on all dessert menus in all food outlets. 
  • Always ensures options are available for guests with special dietary requirements/requests (gluten- and sugar-free options, etc.). 
  • Always prepare special-occasion cakes as requested. 
  • Effectively manages Pastry and Bakery galley staff during all operational activities and service periods, ensuring adherence to Company standards.
  • Plans and updates the weekly pastry and bakery schedule to ensure cross-utilization of resources/manpower as well as cross-training opportunities.
  • Always participates in daily meetings with Galley management to review the previous day's operational efficiency; offers suggestions for improvement.
  • Conduct regular briefings with the Galley and Dining Room staff in alternative food outlets regarding Pastry/Bakery products with the Chief Baker’s support as needed. 
  • Participates in the Executive Chef’s and Food and Beverage Director's meetings as requested. 
  • Always monitors costs and expenditures of pastry and bakery operations, and controls production levels, targets, and par levels to ensure they fall within the established budget.
  • Always monitors consumption trends in the various outlets and sets production levels, accordingly, consistently informing the Executive Chef of changes within an appropriate time frame.
  • In coordination with the Chief Baker, observes each teammates performance using their role description as a guide and delivers prompt and appropriate correction, improvement, or reinforcement.
  • Identifies top performers and mentors them for career advancement or promotion in coordination with the Chief Baker. 
  • In coordination with the Chief Baker, continually trains and coaches Pastry-Bakery galley staff in the correct production methods and skills, culinary techniques, menu and recipe knowledge, product-holding techniques, and presentation and delivery of the product. 


Skills, Knowledge & Expertise

  • Degree in Pastry Arts from a recognized culinary institution or three-year apprenticeship in lieu thereof
  • Minimum of six years of experience in large volume hotel or pastry operations preferably with cruise ship experience of which at least two years of experience were as Chef de Partie Pastry or equivalent rank 
  • Must be familiar with menu cycles and daily consumption of products by itinerary
  • Ability to manage a large volume production schedule and team
  • Must possess a large repertoire of menu knowledge and pastry skills
  • Proficient knowledge of MS Office and job-related computer software
  • Command of the English language, both verbal and written
