Key Responsibilities

• Develop and practice correct cutting, trimming, and processing techniques for meat and fish products in line with Princess standards, seeking guidance from the Chef de Partie Butcher or Chief Butcher as needed.
• Support the butchery operation by preparing, portioning, and labelling meats and seafood accurately, ensuring consistency in quality, size, and weight.
• Monitor the quality, quantity, and presentation of all butchered items, promptly reporting any discrepancies or concerns to the Chef de Partie Butcher or Chief Butcher.
• Assist with the loading, receiving, and safe storage of meat and fish products, following FIFO and stock rotation procedures to maintain freshness and minimise waste.
• Accurately complete and fulfil internal requisitions for meat and seafood, ensuring timely delivery to the relevant galley outlets.
• Weigh, record, and document incoming and outgoing food items in line with company procedures and inventory controls.
• Maintain a clean, organised, and sanitised work area at all times, adhering to all public health, food safety, and hygiene regulations.
• Follow all company policies, timekeeping rules, and General Emergency Organization duties, participating in required drills and trainings.
• Work collaboratively with the butchery and galley teams to support smooth operations and consistently high standards of guest service.
• Foster and maintain professional, respectful working relationships with teammates, promoting a positive, inclusive, and harassment-free work environment aligned with Princess core values.

Skills, Knowledge & Expertise

• Minimum of 1 year’s experience in a high‑volume butchery, hotel, cruise ship, or similar professional kitchen environment.
• Sound knowledge of basic meat and fish preparation, cutting, trimming, and portioning techniques, including correct presentation and preservation.
• Basic understanding of food safety, public health, and hygiene regulations, with a commitment to following all company and regulatory standards.
• Good organisational skills with the ability to plan, prioritise, and complete work accurately within set timeframes.
• Strong attention to detail, particularly in relation to product quality, portion control, labelling, and record keeping.
• Fluency in English, both written and spoken; additional languages are an advantage in a multicultural environment.
• Understanding of the foundations of guest service and the impact of consistent food quality on the overall guest experience.
• Motivated, proactive, and eager to learn, with a genuine desire to develop skills and progress within the culinary team.
• Personable communicator with strong interpersonal skills and a warm, respectful, and professional manner.
• Proven ability to work effectively as part of a diverse, multicultural team, contributing to a positive, inclusive, and harassment‑free workplace.
• Willingness and ability to perform physically demanding work, including standing for extended periods and lifting or moving heavy items as required.
