Your Purpose

The Travelling Fleet Supervisor - Yacht Club Executive Chef is responsible for supervising and guiding the onboard culinary teams, providing leadership and direction to ensure efficient operation of all culinary services in alignment with established budget parameters and corporate guidelines.

Acting as the strategic link between the corporate office and vessel management teams, the Travelling Chef serves as the primary point of reference for all culinary matters across the fleet. This role ensures consistent quality, compliance with company standards, and continuous innovation, setting forward-thinking culinary goals to maintain a competitive edge in the industry.

In addition to operational leadership, the Travelling Chef plays a crucial role in team development, mentoring and coaching onboard culinary talent in accordance with the company’s philosophy, developing skills, and fostering growth within the team.

Your Impact

Key Responsibilities

  • Provide strategic leadership to fleet-wide culinary teams, ensuring alignment with brand standards and philosophy.
  • Conduct regular ship visits to oversee operations, quality, and compliance.
  • Drive continuous improvement in food quality, presentation, consistency, and cost control.
  • Review and optimize menus, recipes, and culinary concepts, ensuring compliance with approved product programs and specifications.
  • Define and monitor fleet-wide culinary standards, procedures, and audits.
  • Oversee recipe review processes, galley checklists, and venue evaluations during ship visits.
  • Support and lead menu implementations, special projects, and operational initiatives.
  • Review food orders, PAR levels, and provisioning practices, supporting onboard teams.
  • Maintain strong knowledge of premium products, brands, and cost-effective technologies.
  • Be able to assume any Executive Chef or culinary management role when required.

Guest Experience & Quality Assurance

  • Ensure a consistently high-quality dining experience across all venues.
  • Monitor guest satisfaction metrics and implement corrective actions.
  • Participate in guest-facing culinary activities and enrichment programs when required.
  • Ensure compliance with health, hygiene, and safety standards, including inspections and self-assessments.
  • Anticipate and resolve quality, provisioning, and product discrepancy issues.

Training & Leadership

  • Develop and deliver fleet-wide culinary training aligned with brand standards.
  • Mentor culinary leaders and support succession planning.
  • Promote a high-performance culture in collaboration with HR.

Fleet & Reporting

  • Act as the primary culinary liaison between fleet and corporate teams.
  • Conduct structured operational reviews and submit objective ship visit and performance reports.

Your Journey so far

Experience

  • Minimum of 10 years in high-end galley operation, advanced culinary skills.
  • At least 5 years in senior leadership roles within the cruise industry.
  • Proven experience in world-renowned luxury hospitality environments.

Leadership & Communication

  • Dynamic leadership style with a track record of building and inspiring multicultural teams.
  • Excellent communication skills, fluent in English; other languages an asset.

Technical Proficiency

  • Strong proficiency in Microsoft Office Suite and industry-specific systems.
  • Knowledge of HR protocols, Time and Attendance compliance, and MLC regulations.

Operational Knowledge & Compliance

  • Deep understanding of  food operations, and hospitality standards.
  • Expert in interpreting operational manuals and enforcing international safety and health compliance.

Professional Competencies

  • Strategic thinker with operational agility and business acumen.
  • Highly detail-oriented, results-driven, and guest experience-focused.
  • Strong collaborator capable of working cross-functionally in a complex environment.

Financial Oversight

  • Ensure profitability and financial sustainability of F&B departments.
  • Implement continuous improvement plans to meet or exceed economic targets.
  • Oversee cost control, inventory optimization, and resource planning to support financial objectives.
