Your Purpose
The Maître D’ Sommelier, in line with Company guidelines, leads the Wine Bar as a revenue-driving venue while elevating the onboard wine culture through expert curation, service, and guest engagement.
The role ensures optimized wine sales performance, delivers refined and personalized wine service, and provides ongoing guest wine education through recommendations, tastings, and storytelling.
Your Impact
• Works together with the Beverage Manager, Restaurant Manager & Cellar Master to supervise the overall Wine Bar operation onboard focusing on wine/beverage and food service, wine and food culture, and revenue generation.
• Works directly with the Wine Bar team using hands-on leadership approach, with an emphasis on guest service techniques, wine storytelling, and immersive experiences.
• Is fully in charge of training all bar and restaurant hosts rotating at The Cellar in terms of food and beverage product knowledge, concept introduction, sequence of service, setup and breakdown, and guest interaction.
• Has full knowledge of all fresh cold cuts and food offerings, including ingredients and allergens, in order to confidently present the selection to guests and recommend pairings based on their wine choices.
• Presents an engaging storytelling about the curated food selection tailored for The Cellar, enhancing the overall wine and food pairing experience.
• Works closely with the Chef to ensure the continuous availability, quality, and consistency of The Cellar food concept and offerings.
• Delivers all Beverage Tasting Experiences with the utmost professionalism and entertainment value and is always looking for ways to enhance the wine tasting program.
• Act as a personal wine concierge for the guests, assisting them in selecting wine labels tailored to their preferences and enhancing food and wine pairings
• Is fully knowledgeable of all equipment forming part of The Cellar concept, including glassware, collaterals, display items, chinaware, holloware and silverware, and is responsible for their proper management, inventory control and future orders.
• Always Adheres to Public Health regulations and requirements.
• Supervise and monitor the correct application of food safety procedures and food quality requirements related to all Wine Bar processes.
• Is responsible for the entire Wine Bar wine list upkeep and maintenance as well as menu suggestion wines.
• Facilitates assets management (maintaining facilities and equipment in good working order).
• Actively participates in new host training and development as well as focusing on overall host retention.
• Wil ensure that wine par levels in the Wine Bar are maintained at required levels, conducts periodic spot checks to ensure that requisitions and transfer forms are being completed accurately.
• Assit the Beverage Manager in forecasting beverage consumption and to place accurate and timely beverage orders for the Wine Bar.
• Actively participates in loading and overall management of the wine store for Wine Bar needs.
• Is fully aware of all PPD targets and actual figures for the Wine Bar.
• Focused on increasing wine knowledge for guests, providing upselling opportunities while maintaining costs within budgets.
Your Journey So Far
• Minimum of 4 years Wine experience
• Preferably a “Court of Master Sommeliers” Certified Sommelier or WSET Level 3-4
• Food Safety/HACCP certificate required.
• Intermediate knowledge on food safety.
• Must have a working knowledge of the following programs: MS Office Suite, Micros, Fidelio/Otalio or similar systems.
• Positive attitude. Flexible and pro-active.
• Must have complete integrity.
• Excellent guest service skills.
• Fluent in written and spoken English. Any additional European language is considered an advantage. Explora Fleet English Level: C1
