Job Responsibilities:
- Responsible for the production and delivery of baked and pastry items for all food outlets, always ensuring compliance with Company recipes and picture presentation as the minimum standard.
- Always ensures product quality in all food outlets through tasting panels and by managing and participating in mise en place during preparation periods.
- Continually demonstrates knowledge of new bakery and pastry trends and production methods and regularly seeks guidance from the Corporate Pastry Chef / Corporate Bakery Chef / Executive Chef on implementing suggestions.
- Always ensures that section recipe files are maintained and available to staff.
- Effectively manages Pastry and Bakery galley staff during all operational activities and service periods, ensuring adherence to Company standards.
- Plans and updates the weekly pastry and bakery schedule to ensure cross utilization of resources/manpower as well as cross training opportunities.
- Conducts daily briefings with the Pastry and Bakery galley teams to discuss the previous day's operational performance and efficiency, and upcoming production and events.
- Always participates in daily meetings with the Chief Baker to review the previous week’s/day's operational efficiency; offers suggestions for improvement.

- Conducts regular briefings with the Galley and Dining Room staff in alternative food outlets regarding Pastry/Bakery products with the Chief Baker’s support as needed.
- Participates in the Executive Chef’s and Food and Beverage Director's meetings as requested.
- Trains and leads the Pastry-Bakery team to always produce and deliver the Pastry-Bakery product within budgetary targets.
- Always monitors costs and expenditures of pastry and bakery operations, and controls production levels, targets, and par levels to ensure they fall within the established budget.
- Always monitors consumption trends in the various outlets and sets production levels accordingly, consistently informing the Executive Chef of changes within an appropriate time frame.
- Always ensures that products are utilized for their intended application and that staff are monitored during production periods to ensure compliance.
- In coordination with the Chief Baker, observes each crewmember’s performance using their role description as a guide and delivers prompt and appropriate correction, improvement, or reinforcement. Coaches and develops skilled, engaged team members to become the Consummate Host.
Qualifications:
- Must have a tertiary qualification in Culinary Arts / Pastry/Bakery Production from a recognized institution.
- Must have at last five years of experience as Executive Pastry Chef in a large Food and Beverage establishment and, preferably, have shipboard experience.
- Must have extensive knowledge of Pastry/Bakery products and demonstrable cooking techniques.
- Must have the ability to lead and train subordinates and provide clear direction under pressure.
- Command of the English language, both verbal and written.

Work Experience Requirements
All applicants must have previous experience in working on a Cruise Ship.
Language Requirements
Good knowledge of the English language is required.
