As Sushi Chef you will create lasting memories by offering high-quality sushi to our guests who will enjoy an excellent dining experience that offers a large menu of nigiri, sashimi and maki rolls. 



Key Responsibilities

  • Inspects the quality of fish / seafood, vegetables and other ingredients used to prepare the required sushi dishes and informs the Executive Chef and Inventory Manager when quality is sub-standard.
  • Regularly takes inventory of food supplies and other products and assists with placing orders.
  • Regularly takes inventory of equipment and other resources needed for menu production and reports any problems with galley equipment to the appropriate Food & Beverage team members for service repair or replacement.
  • Exhibits excellent time management skills.
  • Creates and executes daily galley preparation plan for menu production. 
  • Expertly cuts, slices, and fillets different types of fish / seafood and vegetables as well as displays mastery of sushi-rolling techniques and consistently produces visually pleasing plating presentations.
  • Prepares various types of sushi dishes including maki, nigiri and sashimi according to established guidelines on quality, portion size, presentation, and food safety
  • Applies sound knowledge of food safety regulations and food allergy issues to preparation and plating of menu items.
  • Demonstrates the ability to work under pressure and stay focused.
  • Guides team in maintaining a clean work environment in order to prevent food contamination.
  • Ensures galley team members know how to sterilize all utensils, instruments, and equipment used in sushi preparation before every meal use.
  • Evaluates and provides training on knife skills and production methods unique to successful delivery of the sushi menu product.
  • Assists in creating training documents and materials related to the sushi menu
  • Communicates with team members and guests as needed to explain finished dishes, preparation, key ingredients, flavor profiles, etc.
  • Communicates with wait staff to ensure that special requests and food allergy considerations are met as related to the sushi menu.
  • Follows culinary trends as related to sushi/sashimi menu items and shows broad knowledge of a variety of raw fish, seafood, other ingredients and flavors in order to inform galley team and communicate a deeper understanding of the menu goals.

Personal Characteristics

  • Accomplished Sushi Chef with precise Sushi culinary standards, attention to detail and a passion for travel who can lead the Culinary team for this onboard specialty restaurant.
  • Collaborative individual who can uphold set standards consistently while supporting initiatives and business goals of the Princess Culinary Team and Food & Beverage Team. 
  • Sushi Subject Culinary Expert who knows preparation, mise en place and production techniques but can also communicate main standards to the onboard Culinary Team as well as interact with guests and corporate team members at every level. Proven experience working in an upscale sushi restaurant preferred.


Qualifications and expertise

  • Candidate must have at least five years of experience in the galley with at least one year of experience as Sushi Chef d a high-production culinary environment at a large Food and Beverage establishment and/or Cruise Ship.
  • Candidate must possess a formal qualification in culinary arts from a recognized culinary training institution.
  • Candidate must be knowledgeable and experienced in the preparation of sushi, nigiri, temaki and sashimi production.
  • Must possess the ability to supervise and train teammates from different nationalities.
  • Good command of the English language, both verbal and written.
  • Good command of the Japanese language.
