About you\u00A0

  • \u00A0 \u00A0 10+ years' experience as an Executive Chef or similar position, within a 5 Star hospitality and/or restaurant environment; advanced culinary skills are required\u00A0
  • \u00A0 \u00A0 Must have experience in leading multi-cultural teams; flexible, stress resistant, committed team player; strong administration skills are preferred\u00A0
  • \u00A0 \u00A0 Advanced knowledge of Microsoft Word, Microsoft Excel, Outlook, PowerPoint, plus Mobile Devices, Point of Sales system (MXP database.)\u00A0
  • \u00A0 \u00A0 Guest-focused, service-oriented, positive personality, professional appearance and impeccable hygiene standards are required, with excellent knowledge of all Public Health Policies;\u00A0

Role Overview\u00A0

As part of our Mississippi Food & Beverage team, your job as the the Executive Chef is to efficiently ensure the operations of all food production areas, by consistently analyzing the food production quality & cost, keeping within budget & monitoring time management. As other leadership positions, you will be evaluated based on both guest satisfaction, measurement reports, financial results and crew turnover\u00A0

  • \u00A0 \u00A0 You will be reporting to the Hotel General Manager\u00A0
  • \u00A0 \u00A0 You will be expected to work on a 12/4 rotation (12 weeks on board and 4 weeks off on vacation). Please note that rotation lenghts vary based on staffing and operational needs onboard Viking Mississippi\u00A0

Role Expectations\u00A0

  • \u00A0 \u00A0 Share the overall responsibility of all food orders & consumption with the Inventory Manager in terms of Guest count, itinerary, availability & usage; maintain direct communication with the Inventory Manager for provision related matters - slow and non-moving item lists, inventory, standard products, maintaining par levels, first in first out (FIFO); be present during loading for quality assurance, and report discrepancies to the Inventory Manager\u00A0
  • \u00A0 \u00A0 Work in and as part of a team, not making any changes to the operation/menu without the approval and knowledge of the Culinary Department and Purchasing Department; adjust menus according to merchandise availability and unexpected shortages; compile & submit reports on each cruise\u00A0
  • \u00A0 \u00A0 Ensure that all menus, recipes, methods and specifications are adhered to, and spot-check all venues serving food on a daily basis to ensure that all food outlets & displays are in line with the quality & cleanliness of Viking\u2019s Standards and all Public Health Policies\u00A0
  • \u00A0 \u00A0 Lead and support a multi-cultural team, maximizing crew satisfaction, productivity and retention; meet with Team Leaders on a daily basis for \u201CThe Daily Reunion\u201D, to provide feedback & operational updates as well as to ensure that your department is performing to Viking\u2019s STAR Service Standards\u00A0
  • \u00A0 \u00A0 Provide competent leadership to all direct reports. Responsibilities include, but are not limited to: Conducting performance reviews, including discipline as needed, succession planning, crew communication and recognition\u00A0
  • \u00A0 \u00A0 Ensure that you and your team are always wearing the appropriate and specific Personal Protectice Equipment (PPE) as required for their durites onboard\u00A0
  • \u00A0 \u00A0 Uphold impeccable grooming standards at all times by complying with Viking\u2019s Image and Uniform Standards\u00A0
  • \u00A0 \u00A0 Demonstrate outstanding flexibility: able to work at different times of the day, under pressure and always reflect a positive can-do attitude and the best image of Viking\u00A0
  • \u00A0 \u00A0 You will be expected to consistently arrive on time and be prepared for work\u00A0
  • \u00A0 \u00A0 Other tasks and responsibilities may be assigned at leaders\u2019 discretion based on operational needs\u00A0

  • \u00A0 \u00A0 Must be 21+ years old, physically fit and in good health to meet the demands of an intense shipboard role; must be able to carry heavy items and stand, kneel, and bend for prolonged periods of time\u00A0
