The Commis de Rang’s primary responsibility is to assist senior staff in their duties within an assigned station in restaurants, In-Residence Dining, special events or beach BBQs, ensuring Residents and Guests are consistently provided with courteous, engaging, prompt and efficient service.

RESPONSIBILITIES

Restaurant Operations

  • Ensure mise-en-place of waiter stations, food pass area, coffee stations, buffets are ready before and mise-en-place (polishing and cleaning) is completed – this is an incomplete sentence!
  • Assist Chef de Rang and Demi Chef de Rang in operations as well as opening and closing duties of the restaurant.
  • Participate in Chef’s daily special briefings and take necessary notes to enhance food knowledge.
  • Remain fully knowledgeable of all restaurants’ menus and preparations and their brief history.
  • Take orders in In-Residence dining.
  • Serve water and bread and assist in serving and clearing dishes at the table when instructed by Maitre’ D or Senior Maitre’ D in the restaurants.
  • Follow directions of Chef de Rang and the Demi Chef de Rang during opening duties, service hours and closing the restaurant.
  • Complete side duties as assigned by Restaurant Management.

Resident and Guest Services

  • Exceed Resident and Guest expectations in every aspect of personalized service in accordance with Leading Quality Assurance (LQA) standards and participate in regular trainings.
  • General
  • Actively support the goals and objectives for the department and adhere to all new policies and company initiatives as assigned.
  • Participate in all required training provided by the Company.
  • Maintain accurate Time & Attendance Records for each time period worked.
  • Ensure all areas are maintained in accordance with Public Health, Safety Management System (SMS) and Safety & Environmental regulations; adhering to Company Policies and procedures as appropriate to the position.
  • Execute safety duties as per the Emergency Plan and Station Bill.
  • Assist with Ship tours, Zodiac landings, Marina days, Expeditions, and other activities when required.

QUALIFICATIONS, EDUCATION

  • Able to read, write and speak fluently in English.
  • Diploma in Hotel Management is preferred.
  • Minimum of 2 years' relevant experience on a luxury cruise ship, private country club or similar, luxury hotel or resort.
  • One additional language (German, French, Italian, Spanish) preferred.

WORKING CONDITIONS

  • Ability to work seven (7) days a week for an extended period, including day or night, weekends and holidays.
  • While performing the essential functions of this job, all Crew are required to stand, walk long distances on the Ship and may include the repetitive motion of bending, climbing, going up and down the stairs and lifting up to 23 kilograms.
  • All Team members must be physically able to participate in emergency life-saving procedures and drills. All vessel positions require full use and range of arms and legs as well as full visual, verbal and hearing abilities to receive and give instructions in the event of an emergency including the lowering of lifeboats.
  • Work within different temperature changes - indoors to outdoors.
  • Ability to pass STCW safety course.
  • Able to live harmoniously in close quarters.
