The 1st Commis’ primary responsibility is to provide products of the highest quality in terms of freshness, taste, and consistency and to assist with inventories, set-up, breakdown, preparation, and sanitation in all the galleys.

RESPONSIBILITIES

  • Rotate between different sections as requested:
    •  Breakfast: in charge of the breakfast service
    •  Entremetier: in charge of the preparation and cooking of vegetables and pasta
    •  Saucier: in charge of the saucier station and vegetable garnish
    •  Cold Galley: in charge of the lunch service assisting Assistant Chef de Partie/Sous Chef   with mise-en-place
  •  In-Room
  • Ensures constant communication between his/her assigned galley and the Chef de Cuisine/Sous Chef.
  • Directly responsible for all culinary aspects in the kitchen including inventories, set-up/breakdown, preparation, sanitation and that the SOP’s and recipes are followed consistently.
  • Strictly adheres to all recipes, methods and instructions from supervisor.
  • Assists Chef de Cuisine/Sous Chef in adhering to budget constraints in regards, to labor, product, and equipment.
  • Ensures that all areas are maintained in accordance with Company policy, Public Health (HACCP), SMS, safety and environmental regulations.

QUALIFICATIONS

  • Minimum of 2 years’ relevant experience on a luxury cruise ship, private country club or similar, luxury hotel or resort.
  • Minimum of one year experience in hot production preferred.
  • High School Diploma preferred.
  • Certification in Sanitation and Public Health.
  • Strong knowledge of all basic cooking techniques, including roasting, broiling, braising, sautéing, frying, and grilling.
  • Knowledge of cold food production including handling and preparation of salads, dressings, sandwiches, and hors d’oeuvres and understanding of composition, structure, and quality factors of meats, game, poultry, fish, and shellfish.
  • Ability to work in production or line capacities or a combination of both.
  • Working knowledge of inventory management systems and Fidelio preferred.
  • Experience working in a multi-cultural environment.
  • Able to read, write and speak fluently in English.
  • One additional language is preferred.
  • Good computer skills to include Word, Excel and Outlook preferred.
