Throughout our 80+ year history P&O Cruises has remained Australia’s most loved cruise line. As testament to our success in the Australian/New Zealand market we will soon be expanding our fleet from 3 to 5 ships.

An opportunity has arisen for an experienced Food & Beverage (“F&B”) Director to join our onboard team in late August.

Leading a team of food and beverage management professionals and being at the forefront of the entire onboard F&B Operation (bars/lounges, restaurants, kitchens and crew dining areas) the F&B Director is responsible for driving revenue, while striving to exceed guest satisfaction targets and meeting company procedures and standards.

This is an exciting time to join P&O Cruises Australia as we are currently rolling out innovative F&B concepts which the F&B Director will play a key part in implementing onboard.

Our ideal candidates will bring:

  • 5-7 years food and beverage managerial experience as head of department (with a team of 200+) preferably in an upscale hotel (multi outlets), large cruise ship, restaurant chain or high volume food service facility
  • strong financial management skills and previous responsibility for managing the financial performance of an entire F&B Department (incorporating forecasting, cost containment, revenue generation and control of inventory levels)
  • very strong people management, leadership and development skills
  • strong interpersonal, customer relations and conflict resolution skills; a commitment to delivering the upmost customer experience
  • sound communication skills, with a strong command of written and spoken English, and a high attention to detail
  • a Degree in hospitality management, business administration or related field from an accredited college or university or the international equivalent
  • outstanding knowledge of HACCP procedures for sanitation and cleanliness in all food production areas, as well as displaying a superior knowledge of USPH standards

Contracts are for four months duration with two months leave in between assignments. The salary is competitive and flights, transfers and a uniform are all supplied by the company.

All international applicants must have the ability to obtain a medical clearance, possess a current unrestricted passport (valid for at least a year) and be eligible to apply for an Australian Maritime Crew Visa (MCV) and Australian Visitor Visa.

Work Experience Requirements

All applicants must have previous experience in working on a Cruise Ship, in a 4/5* Hotel or in an Upscale Restaurant.

Language Requirements

Good knowledge of the English language is required.
