We are currently searching for a Traveling Executive Chef to join the team! This position is the tactical partner of the purely culinary aspect of the professional kitchen. The Traveling Executive Chef will act as a consultant in the area of training, celebrity standard execution, new menu roll outs, industry trends, benchmarking and other important directives. Candidates must have at least seven years of Executive Chef experience in a high volume, quality food preparation environment.
Responsibilities include (but are not limited to):
- Conducting inspections of all aspects of food preparation and ensuring food quality and preparation meets company specifications
- Specifying objectives and goals to be accomplished onboard, and preparing findings report, following completion of audit, to outline improvement and recommendations
- Monitoring food costs and preparation practices for all assigned vessels, and provides cost saving support materials
- Providing Executive Chefs with menu and recipes, wait staff with detailed specification and descriptions of dishes and training culinary staff in menu cycles or dishes
- Attending designated food shows, training, and meetings with related departments
Hiring Requirements:
- Minimum of seven years of experience in Executive Chef role
- Culinary certification, Certified Master Chef or Certified Executive Chef designation required
- Certificate in Sanitation Training
- Must be able to travel 2-14 days, depending on the itinerary
- Ability to accommodate a 4 months on / 2 months off contract schedule for this onboard position
- Minimum of high school diploma/GED and culinary school degree required
- Ability to participate in emergency life-saving drill and required training
- Ability to read, write and speak English clearly and distinctly
- All international applicants must have the ability to obtain a C1/D1 visa and/ or other relevant visas
