JOB OVERVIEW

  • Manages the Food Services operation of Remy, the elegant, premier dining location aboard the Disney Dream (and soon the Disney Fantasy) serving French-inspired cuisine.
  • Organizes the seating chart and also seats guests.
  • Liaises with the Chef de Cuisine on matters relating to food quality standards, guest requirements, guest comments, special dietary needs, etc.
  • Manages the financial success of the restaurant by achieving budgeted revenue, controlling expenses and maximizing profitability.

REQUIRED EXPERIENCE

  • Minimum four years management experience in a fine dining, “classic French style” restaurant.
  • Proficiency in “showmanship” table-side service such as meat carving, filleting of fish, flambé, etc.
  • Comprehensive knowledge of old-world wines and proven proficiency in Food and Wine pairing.
  • Excellent communication skills and ability to interact with guests of all ages.
