Pullmantur is currently seeking Sous Chef to join our team.
The selected candidate will directs the activities of subordinates engaged in the preparation of the established quality of food for service to passengers and crew. The person will also be responsible for the preparation of food in all outlets or in specific sections as per daily schedule.
This position requires availability to work on board during six months, and after that the candidate will be able to enjoy a minimum two months vacation before the next possible embarkation. Potential candidates must have a minimum of 2 years experience as Junior Sous Chef or Chef Tournant onboard a medium size cruise vessel. In addition to the above a minimum of 6 years experience in active food preparation within large culinary operation in various positions within the Kitchen/ Galley is required.

Responsibilities include (but are not limited to):
- Assists the Executive Chef in directing and supervising the preparation and service for all food on board in accordance with the established menus and recipes.
- Assists the Executive Chef in directing, supervising and training of all employees assigned to the kitchen organization.
- Follow specific guidelines for orientation of all new hires.
- Responsible for checking that quantity and quality of items ordered from stores are received and stored in proper condition according to Sanitation procedures and thereafter used in Accordance to standard recipes, reporting any discrepancies to Executive Chef.
- Maintains a high level of productivity, cleanliness and sanitation throughout the entire kitchen operation.
- Works closely with department heads in passenger service and other areas.
- Practices visible management during all meal hours to ensure an efficient food operation for both passengers and crew.
Hiring requirements:
- Ability to organize and control large sections of the culinary team.
- Excellent knowledge of basic and advanced international cooking techniques.
- Ability to adjust to, and to work in a multi national environment.
- Ability to read, write and speak English clearly and distinctly.
- Basic Sanitation and Public Health and HACCP Training Certificate.
- Basic Computer user knowledge.
- Ability to accommodate to an six months on / two months off contract schedule for this onboard position.
- Ability to adjust to, and to work in a multi national environment.
- A valid passport (minimum 1 year counting from the embarkation date).
- A valid Standards of Training, Certification & Watchkeeping (STCW) certificate.
- Ability to obtain the required visa, depending on the embarkation port.
- Pass Pullmantur pre-employment medical examination.
- Pass a criminal background check.
- Have a Seaman’s book (desirable).
- Ability to participate in emergency life-saving drills and required training.
