Fleet Traveling Chef

The Fleet Travelling Chef is responsible for all culinary activities across the fleet. This position oversees the performance and management strategy in all Galleys in conjunction with the Fleet Executive Chef, the development and training of crewmembers, the planning and implementation of new menus and initiatives and managing financial performance.

Responsibilities include:

Act as a visionary leader for the Galley department, development, and training, insuring effective Communication at all levels.
Menu development and implementation to improve the standards of on-board food production, Consistency & quality.
Actively monitors and when necessary, takes corrective action in all of the culinary department’s finances; manages food costs, inventory, equipment, etc.
Responsible for creating a positive atmosphere in the Culinary Department which will achieve maximum productivity and high degree of responsibility towards producing safe, wholesome, high quality and attractive food.
Working in cohesion to train, implement and ‘land’ all new menus/recipes and concepts.
Responsible for ensuring that Executive Chefs are keeping to the set food cost budgets for crew & guests. Maintaining low wastage and breakage levels by training staff in being cost and waste conscious and recording this.
Candidates must have relevant industry experience in a similar position.

In return, you will receive a competitive salary and a 2:1 work rotation of two months on board followed by one month of leave.
