Your responsibilities

  • Training staff and monitoring compliance with food production and preparation standards
  • Proactive assistance when preparing meals
  • Temporary takeover of positions in exceptional situations (personnel shortages)
  • Ensuring that the dishes served at each meal comply with the standards set
  • Ensuring that the entire kitchen and buffet area is kept clean and hygienic in accordance with statutory HACCP regulations; weekly staff training
  • Keeping lists in compliance with HACCP and A-ROSA standards, especially temperature checks,
  • oil dispensing, cleaning plan
  • Drawing up duty rosters and allocating ancillary jobs in order to guarantee smooth running of operations
  • Taking inventories in the food area with corresponding initiation of necessary orders and ongoing checks of stocks on board
  • Inspecting incoming goods to determine quality and quantity
  • Recording, evaluating and forwarding the food inventory
  • Monitoring food costs
  • Management & supervision of subordinate staff and staff training
  • Performing representational tasks in the guest area, e.g. at the promotions table, at special events
  • Drawing up duty rosters for area of responsibility
  • Assistance with loading
  • Expanding the work area handbook as per guidelines and in cooperation with the shipping line
  • ongoing optimisation and further development of work processes and standards

Your profile

  • Completion of vocational training as a chef; master chef or culinary school qualification if possible
  • Several years of professional experience in the four-star category at sea, on inland waterways or on land
  • PC skills (MS Office)
  • Management experience
  • Ability to adhere to budgets and make calculations; knowledge of recipes
  • Knowledge of HACCP
  • Languages: Written and spoken German and English
  • Health certificate for the gastronomy sector
