About the Role
We’re currently seeking a talented Specialty Restaurant Manager – Gourmet to oversee the operations of a premium dining venue on board a leading international cruise line. In this leadership role, you’ll ensure exceptional service standards, deliver unforgettable culinary experiences, and drive strong revenue performance. From opening to closing, you’ll be the go-to expert responsible for creating refined and memorable moments for guests each day.

Your Life On Board
As a Specialty Restaurant Manager, you’ll lead every aspect of a top-tier onboard dining outlet, ensuring flawless operations, personalised hospitality, and consistent guest satisfaction—all while maintaining a strong focus on profitability.

Key Responsibilities

  • Create Exceptional Guest Experiences
  • Interact with guests daily, ensuring a personalised and seamless dining experience.
  • Support special celebrations and themed events, ensuring every detail—from setup to service—is executed flawlessly.
  • Assist guests with dietary requirements, coordinating closely with the Chef to ensure needs are met with care and precision.
  • Lead & Inspire Your Team
  • Train, mentor, and motivate your team, providing ongoing feedback and cultivating a culture of excellence.
  • Monitor revenue performance and implement effective strategies to boost sales, particularly during periods of lower attendance.
  • Conduct regular audits and spot checks to maintain operational efficiency and inventory accuracy.
  • Operational Excellence
  • Manage the reservation system and maintain accurate records of extra requisitions.
  • Oversee the full restaurant setup, ensuring ambience, lighting, music, and furniture consistently meet brand standards.
  • Drive high service quality by ensuring smooth coordination between dining room operations and the galley.
  • Safety First
  • Supervise sanitation and cleaning procedures, ensuring compliance with HACCP/USPH standards and proper food waste management.
  • Enforce safety protocols and encourage a strong safety culture within your team, fostering responsibility and awareness at all times.

What We’re Looking For

  • Upper secondary school diploma (hotel school diploma or equivalent preferred); higher education is a plus.
  • At least 2 years of experience in a similar role on cruise ships or in high-volume (500+ seats) 4/5-star hotels, fine dining, or gourmet restaurants.
  • Strong leadership, business acumen, and guest-focused mindset.
  • Professional appearance, high energy, and impeccable hygiene standards.
  • Excellent knowledge of Public Health Policies, combined with strong work ethic, motivational skills, and coaching ability.
  • Proficiency in English and Italian at B2 level or higher, plus fluency in either German or French at B1 level or above.
