Sous Chef for Orient Express Sailing Yachts

V.Ships Leisure is looking for Sous Chef on behalf of Orient Express Sailing Yachts.
The Sous Chef assists the Executive Sous Chef in the supervision of the galley operation following the standards of our culinary partners. The Sous Chef is directly responsible for the line personnel’s performance and respect of Orient Express culinary standards and USPH sanitation protocols. In line with Company guidelines, the Sous Chef ensures high standards of food production and presentation, including portion and quality control for guests and crew. 

Key Responsibilities

• Supervises all food preparation and presentation as instructed by the Executive Sous Chef or Executive Chef.
• Ensures compliance with all USPH and HACCP protocols for food handlers.
• Ensures all activities and dishes are prepared in precise accordance with recipes, pictures and manuals.
• Is responsible for the preparation of all special dietary requirements.
• Supervises and inspects buffet lines in the crew/officers’ mess.
• Provides continuous training and leadership and instructs of how to keep the working areas clean and sanitary.
• Participates in meetings as required: sanitation briefings, food production meetings, etc.
• Prepares necessary reports and provides feedback for improvements to the Executive Chef.
• Active participation in onboard training programs.
• Additional duties, not mentioned here, will be expected as per management request. 

Education/Experience/Qualifications:

• Languages: Fluent English.
• Education: High school degree or related. Culinary training mandatory.
• Previous professional experience: 3 years in a similar capacity in a luxury culinary environment.
• Shipboard experience: Yes. 
• Valid STCW certificates.
• Valid Pre-Employment Medical.
• C1D visa mandatory for all positions.
