Position Summary

The Assistant Beverage Operations Manager supports the Beverage Operations leadership team in overseeing all bar and beverage operations. This role is responsible for administrative support, financial controls, inventory management, cost control, and staff supervision to ensure efficient operations, high guest satisfaction, and achievement of revenue and cost targets.

The position plays a key role in beverage cost management, compliance with operational standards, accurate reporting, training, and audits. The Assistant Beverage Operations Manager works closely with the Beverage Operations Manager and Senior Assistant Beverage Operations Manager to maintain quality, control costs, improve profitability, and minimize guest complaints.

Key Responsibilities
Operational & Administrative Duties

Manage and supervise bar operations in conjunction with Bar Management.

Perform all required administrative and reporting duties.

Prepare end-of-voyage reports, daily COS and revenue reports, and turnaround reports.

Oversee and maintain the Bar POS system.

Ensure accurate processing and recording of Accubar, Crunch Time, InfoGenesis, COS, and revenue reports.

Ensure compliance with safety, environmental, quality, and operational standards.

Beverage Cost & Inventory Management

Responsible for overall beverage cost management and achieving assigned COS budgets.

Maintain quality and quantity control of all bar-inventoried items.

Monitor beverage stocks, par levels, and weekly ordering based on business demand.

Own and manage Accubar onboard, including sales, receiving, transfers, and inventory updates.

Monitor consumables and replaceable items (C&R), ensuring proper distribution and inventory levels.

Conduct physical inventory counts twice monthly in accordance with inventory cycle schedules.

Investigate and report inventory discrepancies, spoilage, and breakage.

Support E&O (Excess and Obsolete) beverage initiatives.

Identify cost-saving opportunities and implement cost control measures.

Audits, Compliance & Controls

Conduct daily beverage package audits, including guest folio spot checks.

Perform workstation spot checks to ensure proper storage and waste reduction.

Conduct minibar spot checks with the Chief Housekeeper.

Conduct IRT tax reports and customs declarations in coordination with senior leadership.

Ensure guests are correctly charged for special requests and services.

Training & Development

Provide ongoing training and coaching to beverage staff on pouring accuracy, recipe compliance, and inventory controls.

Assist with onboarding and familiarization of new shipboard employees, including safety briefings.

Ensure staff compliance with uniform, grooming, hygiene, and appearance standards.

Guest Experience & Revenue Growth

Actively participate in promotions, wine tastings, and mixology events.

Monitor guest satisfaction and proactively resolve or prevent complaints.

Ensure snacks and beverage services are delivered according to schedule.

Qualifications

Minimum of five (5) years progressive food and beverage experience in an upscale hotel, cruise ship, restaurant, or high-volume food service environment (shipboard experience preferred).

Bachelor’s degree in Hospitality Management, Business Administration, or a related field (or international equivalent).

Strong understanding of beverage operations, cost control, and inventory systems.

Knowledge of USPH rules and regulations.

Proficient in Microsoft Office (Excel, Word) and POS/inventory management systems.

Strong analytical, organizational, and problem-solving skills.

Physical & Language Requirements

Ability to stand, walk, lift, carry, and move up to 50 pounds.

Full physical capability to participate in emergency and lifesaving procedures.

Strong verbal and written English communication skills for effective interaction with guests and crew.

Work Experience Requirements

All applicants must have previous experience in working on a Cruise Ship.
