Position Summary:
This position is responsible for organizing and controlling activities for the development, implementation, and maintenance of culinary project plans for the Royal Caribbean International brand. He/She will oversee F&B specifications, quality, food delivery, bar operations, mixology, training and recruitment of a diverse staff.
Career snapshot:
- Formulates, recommends and implements procedural guidelines, policies and standards pertaining to the overall food and beverage operations function.
- Compiles key analyses and high-level presentations on culinary and beverage issues.
- Reviews performance of food and beverage costs, beverage revenues and tracks the cost of menu printing/translations.
- Ensures accurate and timely menu development for culinary, special services and beverage operations.
- Develops, alongside the Traveling Chefs, fleet-wide organizational and manpower charts with working descriptions and scheduling.
- Compiles quarterly operations reviews.
- Processes to resolve compliance issues.
Requirements:
- Minimum 10 years in culinary and beverage related positions for established companies, of which seven years should be in food and beverage operations and three to five years at an executive level.
- Bachelor's degree in Hospitality Management or Business Administration.
- Banquet experience in a high volume, quality food preparation operation as well as food and beverage cost management.
- Strong ability to interpret food industry dynamics.
- Progressive experience in first-class hotels, resorts, restaurants or cruise ships
- Strong organizational, planning and communication skills. Excellent interpersonal skills to communicate with all levels of employees.
- Strong leadership capability. Quickly establishes credibility with shoreside as well as shipboard staff as the go-to person for all food and beverage related issues. Actively support shipboard F&B operations by building strong relations and opening communication lines with the management teams/officers aboard all ships.
- Highly innovative in the culinary arena.
- A global thinker. Familiarity with different countries and exposure to different cultures is important. Someone comfortable with different cultures and the patience to learn about and work with others who many not see the world the same way.
- A manager with an incredible sense of customer service. Someone who asks questions, gathers the data and does their homework before jumping to conclusions.
- An individual who is team-oriented and comfortable working with others in reaching objectives.
- Working knowledge of personal computers within a Windows environment with e-mail, Microsoft Word and Excel, and related printers and equipment.
- Ability to respond to common inquiries or complaints from customers, regulatory agencies, or members of the business community.
- Ability to effectively present information to top management, public groups, and/or boards of directors.
- Ability to travel depending on the itinerary, 2-14 days.
