As a Restaurant Manager, you will be responsible for the smooth and efficient operation of the restaurants and other food service outlets throughout the ship towards the goal of achieving total guest satisfaction following company policies. Work closely with the Chef, as well as the relative department heads, to ensure that the guests are fully satisfied with the food and the service.

RESPONSIBILITIES:
Perform duties and functions as directed by the Hotel Director.
Direct, coach, support, supervise, and evaluate (in conjunction with the Hotel Director) the performance of all direct reports.
Thoroughly versed with the company’s high service and food standards, anticipating and fulfilling guests’ needs.
Full knowledge of food operations, menus, cooking methods, menu cycles and service standards.
Responsible for restaurant reservations, doing the utmost to honor all guest requests.
Communicate daily with the Asst. Food & Beverage Manager and the Executive Chef so that the Restaurant and the galley work in perfect harmony to achieve a high level of guest satisfaction and immediately address and correct any guest concerns.
Inform the Hotel Director of all guest issues such as special requests, suggestions or complaints.
Communicate daily with the Bar Manager to discuss wine and bar service in the restaurant and beverage staff performance.
Possess a sound knowledge of wine and wine service to monitor the Sommelier’s performance.
Create team spirit by being a leader, a motivator and leading by example.
Designate specific responsibilities to the Assistant Maître d’s that oversee the various sections of the restaurant.
Assign work schedules, days off and other duties to Assistant Maître d’s, restaurant servers and cleaners.
Assign service stations to all restaurant personnel based on their performance, attitude, and ability without any form of discrimination.
Order necessary equipment for the operation of the restaurant, keeping the Hotel Director informed of any shortages or difficulties.
Keep close control of all equipment and take inventories whenever required by the Asst. Food & Beverage Manager.

REQUIEREMENTS:
Minimum 21 years old
Relevant ship experience is preferred
Good level of English language
Completion of high school or basic education equivalency required.
Two-year associate degree or equivalent in hotel management and/or group catering from a recognized hotel institution.
Minimum of five years restaurant management-related experience (shipboard experience preferred), or an equivalent combination of experience and education.
Intermediate to Advanced skills in typing and computer software skills (Microsoft Word, Excel, Fidelio Cruise, Silverwhere).
Ability to analyze and interpret documents such as recipes and manuals.
Ability to calculate figures and amounts such as discounts, interest, commissions, tips, proportions and percentages.
Ability to solve practical problems and deal with a variety of variables.
Ability to interpret a variety of instructions furnished in written, oral, diagram or schedule form.
Must be experienced in the functionality of special events and facilities.
Proficient in customer service, attention to detail, well organized with leadership skills.
Able to perform a minimal number of secretarial skills, take minutes to meetings, correspondence, etc.
Passionate about hospitality and customer service.
Must have a professional appearance and good hygiene.

Work Experience Requirements

All applicants must have previous experience in working on a Cruise Ship.
