Specialty Restaurant Manager

We are seeking an experienced and passionate Specialty Restaurant Manager to oversee Food & Beverage operations within a specialty dining venue, ensuring outstanding guest satisfaction during dinner service.

As a Specialty Restaurant Manager, you will be responsible for delivering a premium dining experience by leading your team, maintaining high service standards, and ensuring smooth day-to-day restaurant operations. You will play a key role in creating a welcoming atmosphere while consistently exceeding guest expectations.

Key Responsibilities:
Ensure proper mise-en-place and full restaurant setup prior to service
Inspect tables, furniture, fixtures, and overall cleanliness of the venue
Create the right ambiance through appropriate lighting and music
Engage with guests to ensure satisfaction and resolve any concerns promptly
Communicate effectively with team members regarding updates and events
Maintain fair and consistent employee discipline when required
Ensure all administrative tasks and paperwork are completed on time
Enforce all health, safety, and sanitation regulations
Oversee employee check-in, scheduling, and station assignments
Ensure all incidents and accidents are reported immediately
Manage and verify inventory accuracy and timely submission
Uphold grooming and uniform standards for all team members
Ensure accurate order placement between service team and galley
Maintain cleanliness and organization of side stations and service areas
Accommodate special guest requests whenever possible
Monitor service flow to ensure all guests are attended to efficiently
Maintain par stock levels for linens, uniforms, menus, and service items
Deliver professional, friendly service that exceeds guest expectations
Greet and seat guests, managing reservations effectively
Liaise with culinary and management teams regarding operations, special diets, and VIP guests
Conduct team evaluations and provide ongoing feedback
Monitor safe working practices throughout service
Open the restaurant on time and ensure operational readiness
Deliver staff training and development to maintain high performance
Handle administrative and operational duties as assigned


Minimum Requirements:
Certification in international restaurant or hotel management preferred
Minimum 3+ years of experience in hospitality, fine dining, or cruise operations
Proven experience leading, coaching, and developing a team
Strong attention to detail with a focus on guest satisfaction
Excellent organizational and time management skills
Effective communication skills, both written and verbal
Ability to work collaboratively in a fast-paced, multicultural environment

Work Experience Requirements

All applicants must have previous experience in working on a Cruise Ship, in a 4/5* Hotel or in an Upscale Restaurant.
