About the Role

We are looking for an experienced and motivated **Steakhouse Manager** to lead the daily operations of a premium steakhouse restaurant onboard a cruise ship. The successful candidate will be responsible for delivering exceptional guest service, maintaining high operational standards, and leading the restaurant team in a professional and positive environment.

Key Responsibilities:

* Greet and seat guests and ensure a warm, professional welcome.
* Oversee table service and ensure all guests receive timely and attentive food and beverage service.
* Monitor guest satisfaction throughout the dining experience and resolve any issues promptly and professionally.
* Ensure special requests, dietary requirements, VIP arrangements, and celebrations are handled appropriately.
* Work closely with the Chef regarding guest counts, menu items, shortages, dietary requests, special events, and VIP tables.
* Ensure accurate order-taking and communication between the dining room and galley.
* Oversee restaurant reservations and ensure procedures are followed correctly.
* Ensure the restaurant is correctly prepared and opened on time for every service.
* Check tables, furniture, fixtures, carpets, floors, and side stations to ensure they meet cleanliness and presentation standards.
* Maintain the correct mise-en-place and restaurant setup before service.
* Ensure appropriate lighting, music, and overall ambience are maintained.
* Ensure team members are correctly presented, professionally attired, and meeting company grooming standards.
* Monitor service standards and coach the team to consistently exceed guest expectations.
* Ensure safe working practices are followed and all accidents or incidents are reported immediately.
* Manage employee check-in and ensure the team is ready before service begins.
* Prepare fair staff schedules and station assignments.
* Maintain appropriate par stocks of linen, uniforms, menus, and restaurant supplies.
* Ensure all administrative paperwork and inventories are completed accurately and on time.
* Maintain high standards of cleanliness, hygiene, and food safety in accordance with applicable public-health regulations.
* Ensure all environmental and sanitation procedures are consistently followed.
* Communicate procedural changes, upcoming events, and operational updates effectively to the team.
* Handle employee performance and disciplinary matters fairly and professionally.
* Present and serve celebration cakes when required.
* Carry out other duties related to restaurant and Steakhouse operations as assigned by management.

* Ensure compliance with company policies and procedures, including employee clock-in/clock-out requirements.
* Ensure all applicable public-health, sanitation, environmental, and safety regulations are followed.
* Promote and maintain a safe working environment.
* Attend all required training sessions, drills, and safety meetings.

Candidate Profile

* Previous management experience in a Steakhouse, fine dining, premium restaurant, or upscale hospitality environment.
* Strong leadership and team-management skills.
* Excellent guest-service and communication skills.
* Ability to work effectively in a fast-paced, high-volume environment.
* Strong organisational and administrative skills.
* Good knowledge of restaurant service standards, food safety, hygiene, and sanitation procedures.
* Professional, positive, and guest-focused approach.
* Previous cruise ship experience is highly desirable.
* Ability to work effectively as part of a multicultural team.
* Flexibility to work long hours and adapt to the operational demands of life onboard.

Reports to Restaurant Operations Manager / Food & Beverage Director.
