VACANCY: CHEF DE CUISINE – FRENCH & EUROPEAN CUISINE

I’m currently recruiting an experienced Chef de Cuisine specialising in French & European cuisine for an exciting opportunity onboard a luxury vessel.

We’re looking for a strong culinary leader with a luxury hospitality background, excellent knowledge of French, European and American Michelin-standard cuisine, and the ability to lead multiple galley outlets while delivering exceptional standards.

THE PACKAGE
• Rotation: 4 months onboard / 2 months leave
• Accommodation: Single cabin
• Base salary: $5,040 USD per month
• Additional pay: ½ day’s pay for every day worked
• Total equivalent onboard earnings: $7,560 USD per month
• Onboard allowance: $50 USD per month
• Salary is paid during onboard months only
• Joining date: TBC

KEY RESPONSIBILITIES
• Manage multiple culinary outlets, including fine dining, all-day dining, in-room dining, functions and special requests
• Develop menus around guest preferences and luxury service expectations
• Maintain consistently high standards of food preparation, presentation and taste
• Lead, coach and develop the culinary team
• Manage inventory, provisioning, par levels and waste control
• Support the development and implementation of new menus and culinary concepts
• Maintain excellent Public Health, HACCP, sanitation and safety standards
• Work closely with senior culinary leadership on operational planning and continuous product improvement

WHAT WE’RE LOOKING FOR
• Minimum 3 years’ relevant experience within a luxury cruise ship, private country club, luxury hotel/resort or similar high-end environment
• Broad knowledge of French, European and American Michelin-standard cuisine
• Strong modern plating and presentation skills
• Experience developing and implementing new food concepts and menus
• Knowledge of butcher operations, including meat, fish, seafood and poultry specifications
• Knowledge of baking and pastry procedures
• Wine and food-pairing knowledge
• Sanitation/Public Health certification
• Fluent spoken and written English
• Additional European language advantageous
• Molecular cuisine knowledge would be an advantage
• Strong leadership and team-development skills
