.1 Reporting to: First Utility galley (MS Paul Gauguin) or Executive Chef (MV Tere Moana)

.2 Maintain a supply of clean pots, pans and dishware at all times and to maintain a clean and orderly galley area

.3 Maintain a supply of clean pots, pans, cooking utensils, dishes and glassware

• Washes pots, pans, etc. after each meal
• Cleans china and glassware daily
• Cleans china trolleys daily
• Polishes silver in accordance with schedule

.4 Maintains sanitary work areas
• Cleans wet garbage grinder after each meal
• Cleans and sanitizes drinking water dispenser
• Adheres to three sink method of cleaning
• Maintains clean and sanitized sinks and counters at all times
• Utilizes three bucket system per USPH standards
• Maintains clean hand sinks at all times
• Cleans walls, ceilings, floors, gutters, dumbwaiters, etc.
• Cleans service trolleys, fridges, freezers, cabinets, etc.
• Cleans dish washer and glass washer machine daily
• Cleans silver locker from outside on a daily basis
• Adapts the CDC VSP standards to assure that proper food safety, hygiene and sanitation practices are present, inspects operational areas on a regular basis and conducts training to ensure standards are constantly met.

• Maintains equipment in working order by coordinating the routine maintenance and repair of equipment with engineering staff.
