Executive Chef (Cruise) – Worldwide
We are seeking for experienced professional, who are a strong leader, committed to achieving results and motivate others to join us as Executive Chef.
To be considered for this role a brief of your main tasks & activities is listed below:
- Responsible for holding daily menu briefings and tasting of dishes to ensure high nutritional value and variety of food;
- Prepare the voyage report on staffing, breakage and equipment and send to the Fleet Executive Chef, Hotel Manager at the end of each cruise;
- To ensure all menus, allergens, dietary requirements are communicated by the Galley to the Restaurant and Bar team;
- Planning for any shore side food shopping;
- Training, development, delegation & evaluation of the Galley team
- Overseeing preparation and production of all food on-board to be served to both guests and crew taking into consideration dietary, religious and cultural requirements;
- Responsible for keeping to the set food cost budgets for both crew and guests without affecting the guest & crew experience through quality;
Qualifications for this role:
- 3 - 6 years of progressive food preparation experience in high volume cruise ships/top quality hotels or restaurants held similar rank.
- Ability to write and create menus
- 3 years of verifiable certificate of apprenticeship/Culinary Master's Degree.
- Completion of an approved certificate or degree granting culinary program.
- Must be able to supervise staff over 60 people,
- Ability to read, write and speak English fluently.
- Ability to provide culinary presentations and demonstrations.

Work Experience Requirements
All applicants must have previous experience in working on a Cruise Ship and in a 4/5* Hotel or Upscale Restaurant.
