The Role: We seek a talented and experienced 'Chief Baker'.
Description Brief: The 'Chief Baker' at Scenic and Emerald Cruises is responsible for effectively managing the production and delivery of bakery items for all food outlets, ensuring compliance with company recipes and presentation standards. This role involves maintaining product quality through tasting and participating in mise en place during production periods, demonstrating knowledge of new trends and production methods, and managing bakery galley staff during operational activities and service periods. The Head Baker conducts daily briefings with the bakery team, participates in meetings with galley management, and collaborates with the Executive Chef to provide appraisals and encourage staff development. They also monitor costs and expenditures, control production levels, and ensure options are available for passengers with special dietary requirements.
Key responsibilities include overseeing the bakery galley staff, maintaining recipe files, conducting performance reviews, and preparing special-occasion bakery items. The Head Baker ensures compliance with public health policies, cultivates effective working relationships with internal customers, and participates in daily meetings to review operational efficiency.
Minimum Requirements:
- Required qualifications include a degree in bakery from a recognised culinary institution or equivalent apprenticeship
- Fluent English, written and spoken
- Excellent Communication skills
- Approx. 5 years’ experience in a similar role
- Demonstrated shipboard experience
