Summary:

The Wine and Bar Manager supervises all beverage services provided. The position is responsible for training and guiding the Mixologists, training and guiding the Food and Beverage front of house brigade in regards to beverage and wine service as well as maintaining the wine list and stock levels of the wine cellar.

Essential Duties & Responsibilities
SPECIFIC JOB REQUIREMENTS:

  • Responsible to adhere to all onboard safety regulations, SEMS, and Public Health.
  • Follows Restaurant and Bar schedule, ILO regulations, and ensures daily working and resting hours time tracking.
  • Follows Company RSA ( Responsible Service of Alcohol ).
  • English is the first language on board. Respect and listen carefully before answering our guests.
  • Adheres to the company appearance and grooming standards ( Windstar Look ).
  • Communication and interpersonal skills to interact with guests and other employees.
  • Responsible to ensure the brigade offers friendly, courteous, and gracious service.
  • Ensures excellent knowledge of the brigade in regards to daily wine recommendations, beverage menu, and wine menu.
  • Ensures that the Company standards in regards to the service of beverages and wines, recipes and correct garnishes for cocktails are followed.
  • Daily training of Mixologists to ensure standards in beverage preparation and service are in place.
  • Ensures that the beverage sales are exceeded in all Food and Beverage outlets on board and ashore (Beach BBQ).
  • Conducts wine seminars and cocktail demonstrations during a cruise to enhance guests’ experience and generate additional revenue for the Company.
  • Managing beverage items on board eliminating slow-moving items as much as possible, through various promotions.
  • Monitors pouring standards set by the Company.
  • Promotes cost awareness by controlling breakage, spoilage, theft, and wastage.
  • Ensures all beverage handling procedures are carried out per PH standards and designated local regulations.
  • Ensures proper maintenance and cleaning procedures are followed in all beverage areas as per company standards.
  • Responsible for the proper use and maintenance of company-issued equipment to prevent damage or loss.
  • Maintains the highest level of productivity and service within the area of supervision.
  • Works closely and cooperates with other supervisors, colleagues, and employees.
  • Ensures follow-up on Manual's related to area of responsibility.
  • Ensures that brigades are using appropriate beverage terminology and pronunciation to enhance the guest's experience.
  • Assists and executes objectively all tasks related to the department as directed by the Hotel General Manager.
  • Ensures that wine is served at the proper temperature.
  • Responsible for following GIL log - entry and closing.
  • Understands and follows Company core values.
  • Ensures canapés service and rotational signature nuts are offered to the guests daily.

 

EDUCATION:

  • Associate degree or foreign equivalency in Hospitality Management or a related field from a recognized hotel/culinary institution is required.
  • WSET Level 2 as a minimum is requried.
  • Knowledge of public health and sanitation regulations and procedures.

EXPERIENCE:

  • Minimum of three (3) years experience as a Bar Manager or Sommelier in the cruise industry or hotel/restaurant experience.
  • Working knowledge of wine lists that cover all the regions represented in our wine program including but not limited to: Australia, Chile, France, Germany, Italy, South Africa, Spain, and the U.S.A. 
  • Knowledge of international spirits and cocktails.

REQUIREMENTS:

  • STCW 4th Part Basic Training
  • SDSD (Seafarers with Designated Security Duties)
  • Valid Seafarers Medical
  • C1D Visa 
  • WSET Wine Level  2 or equivalent 

Contract - 4 months on, 2 months off

Cabin - Shared

** International Wine knowledge is essential **
