Position: Wine & Bar Manager

Department: Hotel | Reports To: Hotel General Manager

Role Overview:

  • Supervises all onboard beverage operations
  • trains F&B staff
  • manages the wine list and cellar inventory, and ensures high standards of guest service and safety compliance.

Key Responsibilities:

Operations & Service:

  • Oversee bar and wine service across all venues (including Beach BBQ)
  • enforce pouring standards
  • ensure proper wine temperatures, and maximize revenue.

Team Training:

  • Guide and train Mixologists, Waiters, and Dining Stewards on service standards, recipes, garnishes, and correct terminology.

Guest Engagement:

  • Conduct wine seminars and cocktail demonstrations to drive sales and elevate the guest experience.

Inventory & Cost Control:

  • Monitor inventory
  • eliminate slow-moving items through promotions and control wastage, spoilage, and breakage.

Compliance & Safety:

Enforce Public Health (PH), Responsible Service of Alcohol (RSA), safety regulations, and labor hour limits.

Requirements:

Education & Certification:

  • WSET Level 2 minimum
  • STCW Basic Training
  • SDSD, and a valid Seafarers Medical.

Experience:

  • 3+ years as a Bar Manager or Sommelier in the cruise industry, hotels, or restaurants.

Skills:

  • Expertise in global wine regions and international spirits;
  • proficiency in English, MS Office, and MXP;
  • strong public speaking and team leadership capabilities.

Travel & Physical:

Willingness to spend up to 6 months onboard; ability to lift up to 40 lbs.
