This position will be rotated within hotel area: housekeeping, restaurant, bar and galley.

485.0.b A Hotel Utility’s position is multi-purpose and can be performed in the Housekeeping Department and/or the Restaurants & Bars and/or the Mess rooms and/or the Storerooms & Provision Area and/or the Galley and/or general hotel areas

485.0.c Primary Objective of Position

.1 Cleaning and maintaining assigned hotel areas as requested for the departments as listed below:

485.0.d Housekeeping Department – MS Paul Gauguin

.1 Reporting to: Assistant Housekeeper.

.2 Cleaning and maintaining all public guest and crew areas and bathrooms.

  • Cleaning and maintaining floors, walls, ceilings, mirrors, windows, doors, surfaces, fixtures and furniture in public guest and crew areas, including corridors, staircases, circulation areas, concessionaire areas, gym, boutique, spa, lobbies, gangway and elevators, including the guest gym and crew laundry areas, including offices and meeting rooms, including the hospital
  • Cleaning and maintaining floors, walls, sinks, mirrors, fixtures, toilets, and urinals in public guest and crew bathrooms.
  • Replenishing supplies for public bathrooms.
  • Ensures that the cleaning lockers and cleaning caddy is properly stocked and set up.
  • Ensuring proper and sufficient use of chemicals
  • Ensuring proper use of electrical equipment (vacuum cleaners, shampoo machines, etc.) and non electrical equipment and supplies
  • Cleaning trash bins in public areas and bathrooms, and thereby minimizing the use of trash liners by reutilizing bags where possible.
  • Separating garbage prior to delivery to the designated garbage collection areas.
  • Helping with cleaning of cabins on embarkation day.
  • Assisting with luggage duties on embarkation day.
  • Assisting with delivery of soiled cabin linens and towels to the laundry; changing towels “one for one”
  • Assisting with picking up clean linens and towels from the laundry.
  • Setting up lounges or other public areas for scheduled events.
  • Requisitioning cleaning supplies and equipment as needed.
  • Assist in main laundry for washing and pressing (Linens, towels, table cloths and napkins)
  • Requisitioning cleaning supplies and equipment as needed.
  • Be pro-active and flexible in handling unexpected event.

  • Able to use sound judgment when dealing with Guests.

485.0.e Restaurants

.1 Reporting to: Head Waiter

.2 Providing cleaning services in the dining areas, and providing assistance to Waiters and Assistant Waiters, and to provide assistance to Bar Waiters and Deck Stewards.

  • Assisting restaurant team to ensure that all sections are properly set up, clean and ready for service on time,
  • Assisting with the preparation, set-up and decoration of buffets
  • Acting as buffet runner by ensuring that the buffet set up is consistently maintained throughout service to required standards,
  • Maintaining food items correctly stored in buffet or working area, returning leftover food to the Galley after service,
  • Assisting with food and water services in the restaurants if and when required.
  • Acting as food runner during service, ensuring that all food is delivered to the correct station whilst still hot/chilled
  • Assisting in maintaining the cleanliness levels within the Dining Room.
  • Cleaning the dining areas throughout service,
  • Removing dirty crockery throughout service to dish wash area and works with Galley utility to keep dish wash area clear,
  • Vacuums and mopping the floor in the dining areas after each service,
  • Assisting in the day-to-day cleaning of windows, brass, air conditioning units, doors, stations and all other areas as directed by the Head Waiter.
  • Removing garbage from stations and dining and bar areas.
  • Carrying of equipment, chinaware, cutlery, glassware, etc. from/to service areas, from/to dish/pot wash areas or from/to storage areas.
  • Be pro-active and flexible in handling unexpected event.
  • Constantly displays welcoming and approachable demeanor.

.2 Maintain a supply of clean pots, pans, cooking elements and dishware at all times and to maintain a clean and orderly galley area

  • Adhere to three sink method of cleaning.
  • Maintain clean and sanitized sinks and counters at all times.
  • Utilize three bucket system per USPH standards.
  • Maintain clean hand sinks at all times.
  • Clean walls, ceilings, floors, gutters, dumbwaiters, etc.
  • Clean service trolleys, fridges, freezers, cabinets, etc.
  • Clean dish washer and glass washer machine daily.
  • Clean silver locker from outside on a daily basis.
  • Adapt the CDC VSP standards to assure that proper food safety, hygiene and sanitation practices are present.
  • Clean china, glassware, washes pot, pans, etc….after each meal.
  • Clean china trolleys daily.
  • Polish silver in accordance with schedule.
  • Maintain equipment in working order by coordinating the routine maintenance and repair of equipment with engineering staff.
  • Be pro-active and flexible in handling unexpected event.

.2 Cleaning and maintaining the hotel store rooms, freezers and fridges containing food, beverage, consumable and durable items.
