It would be easy to follow the trends and go with the crowds. But we never will.

Fred. Olsen Cruise Lines is a family run company, well known for our quality cruises and the ‘personal’ touch we offer our guests.

We are seeking a dynamic individual who will be responsible for the day to day running of the bar and restaurant outlets onboard. They will consistently maintain and raise standards, taking the food and beverage product to the next level. The person we seek must be energetic, engaging, flexible and able to think on their feet. They must have excellent communication skills and want to make a difference. The position of Restaurant and Bar Manager will report directly to the Hotel Manager, and responsibilities will include:

• Ensuring effective communication within their departments, keeping the Hotel Manager updated on the department matters on a daily basis;
• Attending daily Restaurant and Bar departmental meetings and weekly Hotel meetings;
• Ensuring Restaurant and Bar departments are operating within the company time and attendance guidelines;
• Ensuring the company ‘Hygiene and Sanitation Manual’ and USPH standards are met;
• Monitoring and controlling operating costs, within Restaurant and Bar department;
• Inventories and stock control;
• Vacation planning of Restaurant and Bar department;
• Attending guest parties to meet and greet guests and receive feedback;
• Visibility in all guest areas and available to guests and crew;
• Dealing personally with restaurant/bar related serious guest complaints/concerns;
• Coordinating on a daily basis with Guest Relations Manager on guest feedback (both positive and negative);
• Training, development and evaluation of all Restaurant and Bar brigade.

The ideal candidate will have, or be able to demonstrate:

• Strong leadership qualities, with commitment to achieving results and motivating their team;
• A pleasant and outgoing personality;
• Fluent communication in the English language – both spoken and written;
• A qualification in Hotel Management/Food & Beverage;
• 5 years in a managerial role in a 4/5-star hotel, resort or cruise ship environment;
• Public heath training/qualification;
• Advanced F&B knowledge of all service procedures, knowledge of beverages (wines/beers/spirits/coffee);
• Ability to deliver training.

In return, you will receive a competitive salary and a 4:2 work rotation of four months on board followed by two months of leave.
